- Penne al baffo might be the best and easiest pasta that most people in America haven't heard of. It consists of sauteed onion and ham in a creamy tomato sauce. Traditionally this dish often uses leftover cooked ham but I used deli ham cut into small pieces. I hope you enjoy this penne al baffo recipe!

INGREDIENTS
1 pound (453 grams) penne pasta
2 tablespoons (30 grams) butter
3 tablespoons (43 grams) extra virgin olive oil
1 medium onion
1/2 pound (227 grams) deli ham cubed, can use leftover cooked ham
1 cup (240 grams) heavy cream
1 cup passata (225 grams) or blended plum tomatoes
3 tablespoons parsley minced
1 cup ( 225 grams) reserved pasta water use if the sauce gets too dry

Gonna try this. Usually when I’m adding ham to a dish, I’ll buy a ham steak and dice/cube it. Get more of a bite that way.

I'm still learning but I read that adding both garlic and onion is a bit redundant, does it actually enhance the flavour?

I'd probably use a ham steak, some garlic and red pepper flake, and deglaze the onions and ham with white wine just to chef it up a little. Killer recipe. I want this. This looks so good.

The most useful aspect of your channel sir, is how formulaic everything is. I have been adapting your recipes to fit with flavor profiles instead of the raw ingredients and it has helped a lot in letting me be creative in the kitchen and being excited / motivated to cook. Wonderful channel, best taste tester on the market. Make sure you keep him around for a while, unbiased and reasonable.

Haha James is getting tougher with his reviews. I also think I'd prefer it with prosciutto or guanciale instead of deli ham. I like the name of the dish -- it reminds me of a Chinese soup called "Buddha Jumps Over the Wall",, which has exotic mmeats and seafood. It's so good that vegetarian monks will escape the temple to eat the soup.

I actually used deli ham a lot when I need to use it up. I find that Boars Head is among the best. I use it in cabbage soups potato soups and casseroles. Adds great flavor. Can't wait to try this one.
I love it when James says he doesn't really like something, but never stops eating it. Reminds me of my oldest son! Delightful!
Made this last night for dinner. So easy! And delicious. I used more than 1/2 a pound of ham (probably closer to a whole pound). And, rather than deli ham, I used ham 'steaks' . Also, could not find passata at the store, so I used tomato puree and it turned out fine. My wife, youngest son, and I gave it Five Stars! Thanks for sharing the recipe for this one!

I've been making something almost like this for years (capicola or prosciutto, crushed tomatoes, half & half, and I use a bit of garlic and pepper, so not quite the same). I didn't know there was an actual dish that was similar, I'll have to try it this way sometime.

Watched this last night and realized I had most of the ingredients (except the puree). Made it tonight and it was really, really good despite not any garlic or wine. A feel good meal for sure. And on the cheap if you plan it well.

My Mom used to define "eternity" as two people with a ham. Baked ham freezes well. This would be a wonderful place to use chunks of baked ham. I have to say that a squit of garlic would spark this up a bit. A cup of dry white wine would be welcome as well. I love your posts ... they help me cook better food.
Another fabulous recipe from the best cooking channel on UA-cam. It's something I had not only never cooked before but also a dish I had never even eaten. It was as easy as advertised, actually easier, and tasted better than I could have imagined. My only nit: It would have saved me a bit of agita if the video had made clear that passata and tomato puree are the same thing. I had the folks at my local supermarket looking all over the place before I hit the Google machine and figured it out myself. (I live in New Mexico where Italian cooking is not really a thing!) In any event, that small hiccup aside, this is an incredible recipe that you really should try!

EDIT: Made this tonight and it's my favorite so far!! I added a little white wine and subbed Italian sausage for the ham. It was sooooo good!!

That's so funny to me that James wasn't about it but the adults were. When I was growing up we'd toss diced ham into box macaroni and cheese, and this dish kinda reminds me of that. My sisters and I couldn't get enough -- we still can't, by all accounts -- but my parents finally admitted that they hated it and only made it because it was cheap and fast and we liked it!

This looks tasty, will definitely try it. I make something similar but instead of ham I use mild salami and instead of cream I use a generous amount of pesto. No passata, I use a heap of cherry tomatoes and semi dried tomatoes and 1 to 2 chopped birds eye chili (it's pretty spicy). My 85 year old Sicilian father in-law is always pushing me to make it for him which is flattering considering I'm an Aussie! :) Keep the recipes coming as I love trying them and they remind me of my times in NY.

I would like it with thicker pieces of sliced ham. Deli ham is too thin but great way to use up deli ham all at once. Country ham would be great in this (Virginia style ham).
Oh my favorite pepper grinder is made by OXO good grips radial pepper grinder and costs $15. Easy / quick to fill with clear tip out / fill spout, easy to spin handle that is ergonomic, and easy adjust on the bottom from fine to coarse. I have owned fancy pepper grinders, basic store grinders, and this is absolutely the best and easiest to use. Super fast, not fussy! I buy 1 pound of organic pepper corns on Amazon and store in a quart Ball jar. Yes I love fresh ground pepper! Happy cooking and bon appetit!

Great recipe! Just made it for the kids today. I used bowtie pasta instead of penne, added a little more ham (the kids love ham) and a little less onion, and they were asking for seconds! And like you suggested, I added a little crushed red pepper on my plate, perfect! Thank you! I added the subscription and will be looking forward to following more of your recipes!

Our local Americanized Italian restaurant (nothing close to authentic, but decent food and cheap) has a linguini alfredo with ham that I like on occasion. Now I'm going to have to try this.
