If buying dried pintos bagged , my mom would always pour the dried Beans out on the table and look/ sift thru them bc lots of times there will be little stones / rocks in the bag from the manufacturing plant. You’d be surprised how many stones you’ll find . Then she would rinse them thru a colander before putting in the pot with fresh water. Just a suggestion
Being a guy that grew up on a small family farm , I understand this man's language, and appreciate his way of cooking. Both of my parents cooked so all 6 of us kids learned how at a young age to work in the kitchen and of course doing chores around the farm everyday. Southern cooking & southern conversation. Learned the legs of a table weren't what held it up. The family gathered around it is what really matters !
one of my grandfathers favorite things to cook was homemade beans usually over the 4th of July and his homemade burgers on the grill along with coleslaw and watermelon and the star of the show was his beans...you are the best Kent!
That's why you always have a dog around when you are eating beans. I have been cooking beans for at least 25 years and your recipe is going to used when i next fix some pintos. Thanks Ken it's always a pleasure to learn a different way to prepare Gods blessings.
Kent I hope you and yours had a great labor day. You and Shannon are so genuine and it just does my heart so much good. Thanks for the tip on the dried cilantro. I too find the fresh herb overpowering. God bless you for feeding/teaching the Scouts. I am an old Scout. They taught me a lot.

In West Virginia my grandmother would use 2/3 day leftover beans and mix in flour and smash and make "frijoles fritters" kinda like a potato cake or crab cake but so good. Love your recipe.
I grind beans seeds rice and use as my flour healthier in coffee grinder Used camp coffee in gravies, soup stock Nothing wasted bc were settlers cowboys etc so limited means
Cowboy Kent, I made these exact recipe but used 2 pounds and adjusted recipe. Was gonna take some in lunch for work. Making another pot because EVERYBODY LOVED THEM!!!!!!!! Thanks for the recipe!
Love your videos. My mom taught me to add baking powder just a teaspoon or so to a boiling pot of beans. Let it boil for about 10 min then lower temp and simmer. Add your spices, ham hock, bacon or whatever you want and the gas will be gone. It really works. I have made them both ways and when i don’t add baking powder, boy everyone gets gassy. So just add a little baking powder.
Some say add a tablespoon or two of Apple Cider Vinegar to the beans when you leave them to soak overnight. Pour the soaking water off - the gassy bits will go with it. Put the soaked beans in fresh water to cook.
@@BiNumLiNever heard of that. I may try. Also I do not soak my beans overnight. I clean them add to pot of water wait for it to boil add tsp of baking powder let it bubble once bubbles are gone I reduce heat and simmer until done.
Kent, I just found your videos and I love em. First one I saw you talked about getting up at 3-4 am and cooking in 5 degree weather. About then i figured out you're the real deal, brother. Keep on cooking.

We always save the hambone, and buy 2 ham hocks to cook lima bean soup. I wish I had access to hambones on a regular basis, (I'm jealous). Thumbs up, happy cooking.
Dad was from Northern New Mexico, around Sugarite near Raton, on a Cattle Ranch that's still called the 'Honey Place". He cooked beans this away. He didn't use no fancy seasoning. I remember he loved cumin.Taught me to eat Jalapeno n scrambled eggs when I was young.

"My damn legs are on fire!". That line alone caused me to subscribe! From a TN hillbilly that grew up on "pinto soup beans", this brought back some memories. Keep up the fine work, good sir.
Loved the Boy Scout story, don't blame you for wanting to get outside the blast radius. The first really good meal I ever cooked was on a Boy Scout trip, over an open fire. Hamburger, canned baked beans, a bottle of ketchup and some Worcestershire sauce. I had other Scouts bringing me their stuff, to cook, and kept the pot going for two days, just kept adding to it. We put the campfire scene in 'Blazing Saddles' to shame, big medicine to a bunch of 11 and 12 year old boys. It also instilled the love of cooking in me, first real job I ever had was in a 5 star restaurant as a dish washer, just so I could watch the real deal chefs do their thing. What I learned from them was, do the basics right, like taters and rice and beans, and then add a little twist at the end. God Bless you, and keep you, and those you love. Keep up the good work.
As I was packing up the beans left over, I believe I discovered something new. I believe that when I soak the beans for at least over night, I get almost double the volume of beans. Same number, but each bean is bigger.Comments? Thanks
I love this channel. Started watching when I invested in some cast iron. My first time making beans and first time with this recipe. A few notes: my beans never split. Also, I made the mistake of burning it a little -- not the end of the world, but not a taste you want to introduce. I love spicy food, but maybe go easy on the jalapenos. Still a great recipe. Love it!! I don't have me a big bertha, but this is still great. Just gotta keep stirring and give it some TLC. Best ingredient to any recipe: some TLC.

They don't taste the same either. Why? Because you're getting rid of some of the sugars that produce the methane. If you are afraid of the "gas" - don't eat the beans.
Thank you Kent and Shannon! I received my cookbook last a couple of days ago and now I'm anxious to have a bit of Cowboy Kent blessing our family, too. You two make a great team!
I just made this recipe using cranberry beans - wow! Best beans ever! And it was the first time I've used jalapeno peppers in my cooking - but it won't be the last! Wonderful flavor! Thank you!
Tonight was also the first time using my vintage Wagner Ware skillets. They didn't take much work to restore and I seasoned them - and made BACON to initiate the skillet, followed by diced potatoes. So yummy and they didn't stick. I just ordered your cookbook (two, one for my dad) and tomorrow I'll try making something from the sourdough starter that I put together tonight. This is just plain FUN. And I haven't had a lot of fun cooking for myself. Such a treat!
A good trick to eliminate gas (and it works--done it many times) is soak the beans overnight in tap water and change it out at least twice. They cook faster too after soaking. I like this cookie.
It is nice to see people who still cook like myself. The country, cowboy way. I love every one of Kents videos, and learn something new every video i watch. Went and bought my first cowboy coffee pot today. Will tell you if it was a good purchase off EBAy or not. I am hoping it was.
I like to eat a lot of pinto bean sandwiches. Mash the beans with a bit of miracle whip then spread as thick as you like onto some fresh home cooked or even store bought bread. Awesome good!
Hey Cowboy Kent you got you an Okie Girl here. When I grew up in the 60s and 70s my momma would make brown beans with bacon and serve them on cornbread. But she would soak them the night before so they would cook faster and take excess gas. She was raised by her older sister, Aunt Ettie, who would sometimes use pork salt instead of bacon. I got some about finished in the crockpot with bacon and already have the cornbread cooling. It's been interesting scrolling other folks recipes waiting for mine to get done.
Pinto beans with chopped up shank ham covered over cornbread is one of my favorite meals. Beans beans good for your heart, the more you eat the more you fart.
I grew up on beans and cornbread. We were poor but momma always knew what to cook. We never went hungry. I wasn’t introduced to fast food until I went to college.
A pot of these is bubbling away on the stove right now. Just got done with some pork chops bathed in lime, cooked over hardwood. Fantastic beans ! We used a lot less beans ,, maybe 6 # and none of those jalapenos but extra onion and garlic .. Beans and steak it was awesome,,, all cooked out doors ... Thanks so much for sharing that recipe. We feed 24 people out on our dec k,,, It was a beautiful evening to be with everyone of our kids all the Spouses and grand kids. The correct version of the bean song goes like this, "beans beans the musical fruit, the more you eat the more you toot, the more you toot the better you feel, so lets have beans every meal." Now that's the correct version which is from the great state of Missouri which is the mother of the west. Don't pay no heed to what some Jayhawk tells you. They are full of every 40th bean. Vaughn
Try Anasazi beans from Adobe Mills, gourmet beans from SW Colorado, dry land grown.. they are good but you need to put in a bean ladder....let the little toots out
Beagles are mouthy dogs, really sweet The can't be alone. Need another companion animal/ dog in our personal experience We gave loud one to neighbor Hunter farmer but mouthy one kept coming back w his dish for his bro We had to give both to them.

Hi Kent, thank you for videoing and posting all your work for us to watch. I know this is not easy, having done this myself in my shop. Just tried this bean recipe, outstanding!
I just made a 1# batch of these blessed jewels. Tip of the hat to you and Bertha. They are the best tasting beans I have ever had. You have a great day! Happy Trails
Someone once told my wife's aunt that to keep them from being gassy you poke a hole in them. They came into the kitchen and found her poking holes in the beans. They asked her what she was doing and she said she was defarting them. Sigh.
Years ago while working for the U S Forest Service an old skinner got the new Troop. He took out the small match box, drew a cross in it, and numbered it 1 thru 4 then threw a Pinto bean in the box and had the new troop shake the box and give him the number. After about 5 times, the young man inquired how long it went on. The old skinner told him "until you shake the Fart out of that Bean. Got Cha! LOL
So...you don't need to soak the beans for a few hours or overnight? I always clean out any rocks and bad beans and soak. Just wondered if you don't need to soak them. Thanks for sharing!
Keeping them in a rolling boil longer, as he did, eliminates the need to soak. On the other hand, soaking them eliminates the need to boil and trims off a little time on the stove.
I love beans, cooking and eating them. Never tried this recipe but I will - soon! But if you get nothing else out of this video, pay attention to this: "One burnt bean in a pot - hey it'll ruin the whole deal." He is not kidding. Keep those beans wet and stirred and you won't burn 'em.
@@ptudor63 I'm from Texas & add can tomatoes, fresh cilantro at the end, garlic, onion, cumin, pepper. Sometimes bell pepper & celery. It's difficult to "mess up" pinto beans.
The quintessential cowboy meal! Pintos are featured in every western! Dehydrated, portable protein. Usually the beans are cooked in a cast frypan without a lid, I don’t know how a guy could manage that, it seems like it would take hours to cook a meal!
Great video Kent. I grew up in Duncan 'till we moved to Texas them Alaska. Us 6 kids loved our beans and cornbread, a staple. I remember fishing on the Red river using Dupont spinners. Those were the days.
Kent, I think you're taking a big chance by not sorting those beans before cooking. Someone could easily chip a tooth on a rock, I have found dozens of rocks in bags of beans over the years.
I started helping my mother sort beans back in the '50s. I've been cooking for almost 60 years. I think that qualifies me to have an opinion regarding safe handling of food.
You can’t beat pintos with a good piece of cornbread. And a big slice of raw onion!!! Thanks Kent

I've learned that if you soak your beans overnight and pour out the soak water and rinse the beans before cooking then they don't cause so much gas.
exactly that helps a ton
Peel a Potato or 2 and drop them in while you do the boiling, throw out the potato a little bit before it starts to fall apart.

Try Anasazi beans from Adobe Mills, gourmet beans from SW Colorado, dry land grown.. they are good but you need to put in a bean ladder....let the little toots out
Hey I hear you on the ladder
Oh how I love them beagle dogs ❤️❤️❤️ the best friend you could ever have. Thanks for sharing another fantastic show.
Glad you enjoyed
Beagles are mouthy dogs, really sweet The can't be alone. Need another companion animal/ dog in our personal experience We gave loud one to neighbor Hunter farmer but mouthy one kept coming back w his dish for his bro We had to give both to them.
I always enjoy your vids. Thanks and looking forward to the next one.
Thanks so much for watching
Beans and cornbread with a thick slice of onion. Yum!
Don't get much better than that
"Its a good day to be above tha grass, than the grass being above me."..😉✌
For sure
Every farty1! Now that was a good one. God Bless you and your bride.
I enjoyed the video but I was very surprised you didn't mention or demonstrate sorting the beans to get the rocks out.
Those bags were all open already so maybe they were already sorted.
A few stones in your craw help to grind it all up and digest it.
@last Less stones now that the Dems are hardly seen.
Amen!
lol...but to munch on a li'l ol' stone in your mouth ruins that bite!
hey cowboy those beans look delicious I must say you have a beautiful personality
Yes. That's right. How are you! may I get to know you? Its nice to meet you on here, and I hope to chat with you.. Cheers
Looks good! Gotta clean them beans first. At least that's how my grandma does it.
Lucked out with my bride, she likes beans as much as I do. We eat a lot of them too. Thanks Ken
Take out every farty one... GOT love that one!!! Not only take out the ozone layer but the giggling of all those little boys would be something else! Sounds like a go time! Good job Kent!
it sure was a sight! thanks Galen
i like to use a whole kielbasa instead a a hock, slice it up about as thick as 2 quarters
Yes, that works well.
Hi Kent, thank you for videoing and posting all your work for us to watch. I know this is not easy, having done this myself in my shop.
Just tried this bean recipe, outstanding!
So glad you enjoyed and I have the best producer and editor
Soak in baking soda water over night, rinse off, add water, cook
loved the boy scout story. i am from Houston and was in the boy scouts. it brought back memories of when I " damaged the ozone layer ", lol.
Oh nothing like leftovers. Pinto bean burrito for sure. Hahahahaha yes indeed.
I always made chili with the pintos after a day or two :)
We never have leftovers, the kids scrape the pot.
@@johnfisher5363 that good stuff. 🤙🏼💯🎯🍻
I just made a 1# batch of these blessed jewels. Tip of the hat to you and Bertha. They are the best tasting beans I have ever had. You have a great day! Happy Trails
So glad you enjoyed Scott
love the old wild wild west
That is some real cowboying Mr Rolins, loved watching.
You know, this is another one of those "poor people" foods that make poor people so rich. And they are good for you to boot.
Fine dinning it is
Thanks for the video, made a pot tonight but cut up bacon instead of a ham hock, everyone loved them
Someone once told my wife's aunt that to keep them from being gassy you poke a hole in them. They came into the kitchen and found her poking holes in the beans. They asked her what she was doing and she said she was defarting them. Sigh.
Hey I like that method
Farting is half the fun of eating beans
I know your wife...she is that blonde lady that bought a round the world buss ticket to get away from you.
Got Cha! LOL
Love pinto beans.Been raised on it.I like adding salted pork to it.My wife is midwestern and she got her own idea on cooking beans.
Thanks Gilbert for watching
So...you don't need to soak the beans for a few hours or overnight?
I always clean out any rocks and bad beans and soak. Just wondered if you don't need to soak them.
Thanks for sharing!
If your in a high altitude it is a must
Keeping them in a rolling boil longer, as he did, eliminates the need to soak.
Thanks for watching
May I suggest a can of good dark Beer and a few chopped fresh Tomatoes to your recipe? Let me tell you - it kickin' good! :-)
Why would you want to mess up a mess of beans...you must be from the north.
@@ptudor63 I'm from Texas & add can tomatoes, fresh cilantro at the end, garlic, onion, cumin, pepper. Sometimes bell pepper & celery. It's difficult to "mess up" pinto beans.
@@forreal245 kinda tex mex huh....different part of the country..might be good thought
Hello good looking
The quintessential cowboy meal! Pintos are featured in every western! Dehydrated, portable protein. Usually the beans are cooked in a cast frypan without a lid, I don’t know how a guy could manage that, it seems like it would take hours to cook a meal!
I’m Hispanic there’s not a day we don’t have cooked or fried beans
Great video Kent. I grew up in Duncan 'till we moved to Texas them Alaska. Us 6 kids loved our beans and cornbread, a staple. I remember fishing on the Red river using Dupont spinners. Those were the days.
"One burnt bean in a pot..." I didn't know that.
Its does make the entire pot taste burnt and smokey in a unpleasant way.
Beans --it’s what’s for dinner the videos you make are fantastic sir-- now back to my beans
just need corn bread , and chow chow
Oh how I love me some chow chow
my granny swears by those casserole beans, and I have to agree, there the best.
Kent, I think you're taking a big chance by not sorting those beans before cooking. Someone could easily chip a tooth on a rock, I have found dozens of rocks in bags of beans over the years.
Those bags were all open already so maybe they were already sorted.
.
mevsm1 didn't you see his teeth?lol
I was more worried about the fartin' ones.
I don't know froggie he may just know a little bit more about cooking then you do, what do ya think?
I started helping my mother sort beans back in the '50s. I've been cooking for almost 60 years. I think that qualifies me to have an opinion regarding safe handling of food.
