Felu, thanks for this video. Always love to try your healthy recipes. One trick I usually do is to toast the panko in a pan (sometimes with grated parmesan cheese to add more flavour) before coating the chicken. The panko will turn golden and more crispy, then use it to coat the chicken and bake it as the video above.
My work-around to avoiding excess oil calories is to use an Air Fryer and spray a thin layer of canola oil on one side, cook for a bit, flip and spray the other side and then cook until done. Airfryers can be cheap and this helps get a crunchy tasty crumb without absorbing much oil into the food.
I think a good way you can get a nice color on the breadcrumbs is to mix a SMALL AMOUNT of oil into the breadcrumbs before covering the chicken with it. It will certainly add a few extra calories but not nearly nearly as much as if we were deep frying. I'll try it myself sometime soon but it deff works when I'm baking Mac and cheese. I don't bake Mac and cheese for 45 mins.
If you want to get crispy panko, you could optionally slowly fry a large batch with some oil in a pan. This way you can brown the panko first, and by the time it's finished cooking, it'll be lovely and crispy. You don't need a lot of oil either, maybe a tablespoon for a few cups of panko... Or even a few generous squirts of low calorie cooking spray. I love your videos, and they've inspired me to finally make my own cooking channel! 😊

This recipe looks awesome. Thanks for your recipes. I’ve had good luck with spraying a few grams of oil on the surface of the breading before baking at a high temperature. Then can turn on the broiler at the end for any color.

This was amazing! As you say, chicken parma is difficult to make low calorie! But this was really yum. My fussy daughter loved it too. I made a couple of beginner mistakes that I know how to tweak next time (chicken and mozzerella were both too thick). Also, I was skeptical that the flour was enough to cover the chicken. It was! I did need a little more panko though. Thank you so much for this recipe Felu! I will definitely be cooking this again.
This recipe is brilliant. I made it with around 300g of chicken and together with the mozzarella that was almost my protein target for the day hit at less than 600 kCal. Tempted to add some kind of side dish next time but not sure what to do with.
Awesome recipe! I think, before putting it into the oven you could spray a tiny amount of oil onto it. That should help with browning & crunch without adding too many calories. And instead of baking it for longer, you could bring the oven to the absolute maximum before putting the chicken in. Definitely going to try this recipe. It's a great idea! Also, it's great that you include all the shortcuts for weekday meals.
Two points: 1 - Even a spray of olive oil from a can will really improve the browning of the panko. Or, mix a half teaspoon or full teaspoon of oil in your panko before baking. 2 - While chicken breast is traditional, using a thigh would be better if you wanted to cook it longer and up to 190F+ I have often cooked a thigh to that temp and it turns out very well, all the collagen and connective tissue just melts into juicy flavor. It will be higher calories and fat than a breast, though. Both of these tips will make your parm less healthy, so take that into account.
So I've been binging your vids and I gotta say they're amazing! My favorite so far is the cheesecake. I'm a pescatarian though (seafood only) and would love to see more seafood based dishes, like something with oysters or mackerel!
Next time, and for everyone looking at the comment box, pre toast your panko before tossing the chicken in it and then bake it in the oven. Much better texture

They're good and lower calorie and use ingredients that are readily available (some people love having recipes that have unicorn dust and wyvern oil and I'm like geez, lol).... Regarding the small issue with the panko being pale, I was once given the advice to toast the panko crumbs in a pan first and then it'll be a nice golden color and even crispier when it's out of the oven :D That works pretty well
I usually always have more calories in my version because every chicken breast is different in weight and I'm not going to like cut away a little chunk just to save some calories. I've always been like that I want to eat the whole thing
I'm not exactly sure. The crisp is a matter of time in the oven. I don't think that the air fryer will do this faster but i could be wrong. Couldn't test it because my air fryer is trash

Another good video! Jeez, you're already ripped and vascular...Imagine if you started lifting heavier weights?! You'd be jacked! Are you trying to stay at a lower weight with less muscle mass? Some one your size probably only needs roughly 70-100 grams of protein daily at most. Also: You can use an air fryer as well for the chicken. Works amazing!
No, the truth is that I'm lifting like a madman since 2-3 years but I'm 37 years old. I don't think that at my age I have a lot left in the tank in terms of muscle mass.
@@Felu You definitely do and your still producing a lot of testosterone in your 30's! I'm 32 and got back into lifting about 7 months ago. I've already put on a few pounds of muscle mass and leaned up a bit. I increased my volume (10-15 working sets per muscle group). I go semi-heavy. Not really heavy, but enough for 6-10 reps each set. 5-6 days a week at the gym and I've continued to grow! I've been following a bodybuilding like routine and it's been working incredibly well. I have a feeling that you're actually not eating enough to have muscle growth. Good luck!

Great recipe. I would recommend frying the bread crumbs in a tiny bit of oil to add colour and more crunch too them before coating the chicken.

If you want a crispy coating without baking for so long you can pre-bake the breadcrumbs to help kick start the browning and crisping process.

Yes I saw that as well. The convection mode of the air fryer could help with the crunch. Will try that if i get a new air fryer. Mine is sadly trash

Why not higher oven temperature for the last few minutes? Like 260 C or such? That would "spare" the chicken and brown the coating.
I think that would be too high and the chicken is cooked faster then the batter becomes crispy but I'm not really sure tho
