I interpreted it as: the show will come out in 2025; if it does well, then the next show will follow (in 2 years? - so in 2027?) by which he has had time to write some Dunk & Egg stories... So I understand that he rather sets the Winds date somewhere around 2026 (for example mid 2026 Winds, then rest of 2026 and 2027 Dunk & Egg stories), not necessarily 2025. Just my interpretation:)

Yup, just like The Name Of The Wind, Kingslayers Chronicles we will never get continuation just like Winds of Winter. He is stuck and no one on gods green earth can make him write the book (because everyone already tried).
Winds of Winter will come out the same year we get a practical fusion generator.

They are actually thinking it’s a good thing Martin has out a time table on when it will be published…. Ya know because George needing to finish a book because a new season of a tv show really worked out last time! These guys seem nice but this is about as deluded as it gets.

This is the most optimistic blog post from him for awhile. It's good that he's feeling good, don't stress beyond that. I read feast around 20 years ago, what we have already was worth it.
Every time we get a Winds of Winter update discussions I laugh hysterically. At least we didn't have to do a spectrum analysis of Martin's speech this time :-)

My secret hope is that he has taken so long to tie up all the loose ends because he wants to give the series a proper and satisfying ending, which means he may have written a lot more of A Dream of Spring than he has let on. When Winds gets released, Dream could be half done.
I read in an article, where they quoted George's words from a podcast, that he said that while writing he suddenly had the perfect ending for one character, he didn't mention which, but that he loves the idea and will add it to A Dream of Spring. That's the most recent I've heard of him mentioning ADOS especially in a good light. I haven't listened to that podcast yet so the whole thing could be fake, but in my opinion it sounds like how George expresses himself and I'll take it as so. George sounds very optimistic this year and we should too.
I maintain that we won't get Winds of Winter until the same year that House of the Dragon season 3 comes out. So 2026.

So George is expecting to finish winds by next year. This is great news. 2-3 years earlier than when I expected him to finish. Nevermind I heard the quote again. Sounds like we have to wait for about 3-4 years so my prediction is still right.

I remember seeing the post you showed where he says words of wisdom from the quote with dream in it and the blue rose and how you theorized he was insinuating he had finished and was onto dream of spring and we'd see in four months, well i was so convinced by your prediction of his post i had commented if it meant nothing he was clearly trolling us which i didn't believe he would do... well turns out he was trolling us, and I've never been more certain we'll ever get winds, he mentions to that lady in that recent interview who says she was planning on finishing her book by 2025 that shed be finished before he finishes winds, so to me he basically said it wouldnt be in at least over a year... were never getting winds is my point, its time to let it go...
