Ingredients:
1 cup of oats (90g)
1 Tbsp of white granulated sugar (14g)
1 tsp of ground cinnamon (2g)
1/2 tsp of baking soda (2g)
1/4 tsp of salt (1g)
1/2 cup of milk, whole, 2%, skim, almond, etc. (118ml)
2 large eggs
1 large ripe banana
1 Tbsp of honey (21g)
2 to 3 Tbsp of chocolate chips, optional (28 to 42g)
1/4 cup of walnuts, pecans, raisins, craisins, blueberries, etc. optional.
Tools/Equipment:
Food processor or blender: amzn.to/3OQpoWy
Spatula
Mini bread loaf pans or 1 4x8 inch loaf pan
Cooking spray or shortening/butter
Makes 2 to 4 servings. Bake at 350 F/176C for 25 to 35 minutes until a toothpick comes out clean when poked in the center.

@@inthekitchenwithmatt - Can I use flavored oatmeal packets for the oatmeal? I have several TJ Pecan Pumpkin packs that I would ❤️ to try this with.
@@private3649 Yes you can, but if you do, I don't recommend adding the sugar and salt from this recipe, and you may want to leave out the cinnamon and honey too, since those packets are already flavored.
Here is what I would do to your recipe. I will pulse the oats in the blender until it becomes oat flour. Then pour it into a bowl. Add the cinnamon, baking soda & salt to the mixture & give it a good whisk. Then mash up a ripen banana then add that, the eggs & the milk & 2 Tbsp honey (replacing 1 Tbsp of sugar in your recipe) & then give it all a good mix. Transfer the batter to a loaf pan & bake it for 35 mins @350°F & I really do hope it will come out like yours. Pretty confident that I can do this recipe. It doesn’t seem hard at all.
Just follow the recipe like I showed in the video. And it will come out like I showed in the video. :)
@@inthekitchenwithmatt I made it the way I told you that I wanted to make it & it turned out exactly like yours! I used an extra Tbsp of honey instead of the sugar that you used & worked out! I only used my blender to pulse the oats into oat flour then did the rest by hand. After baking it, the smell reminds me of banana bread. I think I should call this oatmeal banana bread. It was so easy to make!
I want to add almond butter to this sometimes or maybe peanut butter. Also, if I use a regular loaf pan that I would use for banana bread, how long would I bake it for?
You bake it until it is done, by checking it with a toothpick. Start with 25 to 35 minutes. It entirely depends on the size of your pan.
@@inthekitchenwithmatt The texture of this when you poured it out into those loaf pans, it reminds me of a banana oatmeal smoothie with cinnamon & honey or maple syrup & that kind of smoothie is delicious.
