For mirin you can use more sake and add some sugar (as mirin is sweet). Sho Chiku Bai is a nice and inexpensive sake. You can substitute dry r medium sherry or chinese Shaoxing wine (which is a rice wine with a stronger flavor than sake and is used in all chinese cooking). If you don't have dashi powder, you can crumble some some seaweed and a drop of liquid smoke (as the bonito is smoked before shaving into "flakes). Or for a slightly different taste but stil yummy, reconstitute a few dried mushrooms and use the liquid from that (be sure to not add any grit from the bottom of the soaking water).
That looks really yummy. When I want something quick and easy I use the inexpensive long grain rice with what ever I have on hand. I like the taste of teryaki sauce so I use that instead of soy. 😊
Okay recipe. I would've browned the chicken and sauteed the onions before adding in the sauce and steaming the cabbage. Sake is expensive, much. I'd prolly left sake out.
