Actually all the 3 sauce u like are sambal max. Indonesians call them all sambal. The shredded shallot with chilli is called sambal matah, that's traditional balinesse sambal. Every region have their own sambal. If you go to north sulawesi you have to try sambal roa. That's their famous traditional sambal... ^^
I'm from Malaysia. I've never been to bali but I already been to Jakarta in long time ago. I've never seen Indonesian satay before. Indonesian food looks great.

If you're still in Ubud, try out this restaurant called Kedaton. It's right up the street near Monkey Forest. The food is amazing and you will LOVE the spicy sambal.
That coconut tart had me drooling 🤤 omg 🤭 that looked so fantastic. I love that bamboo hut restaurant, the tranquility of the water and those fish were awesome. Great video Max that dirty duck diner is awesome, love the atmosphere

The Dirty Duck Diner has spectacular food. The duck was heaven, the sambals were amazing too. I’d love to go back to Bali just for the duck, I dream about this dish. Trying to find a recipe so I can make it at home.
Indonesian cuisine is one of the best and the hottest around. Agree all these sambals green and red alike are making my screen wet with drools. But gees! ur spice tolerance is high!

Wow really mouth watering varieties of dishes. Just noticed, southeast Asian countries have a very similar foods menu. Either add more or less spices, or their own version. Changes effect because of their own cultures.
Hello Max! And yet another lively video filled with num num nummy food. I was still a snotty kid when I visited Indonesia, somewhere in West Kalimantan. Decades later, here I am watching your food docu being reminded of the delightful sights, scents, flavors and even sounds of Indonesia; makes me want to revisit. Ha! I was half-expecting you would pull out a jar of chili oil from your bag when you said you really wish the satay had more kick/heat. I'm actually glad you didn't. Sometimes food has to be appreciated just as it is and from the looks of it, you actually enjoyed it! I think it's the manis kecap that lends sweetness to Indonesian dishes ... that or just heaps of sugar :) Wow, you caught me by surprise when you described the coconut meringue pie's crust as cardboardy. Either I wasn't paying attention to your previous vlogs or this is, in fact, your first time to express disappointment. Well, the pie did have its redeeming qualities! Your honesty is refreshing like buco juice. Great job Max! (I have a feeling gudeg will be featured in this series ... or not!)
haha yeah, i mean do not get me wrong, it was still good because I still ate it! haha but I feel like it could have been better. Yes, sometimes you have to just appreciate dishes for how they are! Not every dish should be spicy! Well, hopefully this series can give you some ideas on what you would like to go back and eat!

at 10:41 I saw an individual portion of mocca tart covered with mocca buttercream & salted caramel peanut. You should try, usually the cream loads with rum, the cake is an old fashion sponge cake... yumm

The last sambal with alot of onion is actually a typical balinese sambal. Sambal matah. One of my favorites type of sambal if done correctly.
