Krispy Kreme Sandwich with Creekstone Farms Brisket

  • I was gifted a beautiful brisket purchased from CreamCo Meats in Oakland which sources it from the same place that Franklin's BBQ gets theirs (Creekstone Farms). I went Central Texas style with it and seasoned it with salt and pepper, threw it on the Oklahoma Joe's Highland offset and used post oak wood for the fire. I also covered the butcher paper with beef tallow for good measure. The brisket was really tender and flavorful!
    So why the Krispy Kreme sandwich? A good friend of mine is addicted to Krispy Kreme doughnuts and wanted to try it. We were all curious to see if it would work and to our surprise... it does! Somewhat. We all tried it after the cameras were off and it wasn't that bad. Do you know of any odd pairings with brisket that are surprisingly good? Share them in the comments!       Haha thanks! I was almost offended when my friend brought up this idea. Ruining such a nice brisket! But it wasn’t half bad in the end.

    Hey! I have a suggestion you should look at. I had a goal to purchase an Old Country Pits Pecos smoker and for two major reasons, $271 shipping cost and they raised the price $50 from $399 to $449, I changed my mind. I was contemplating to purchase the Oklahoma Joe's Highlander like you did as I can pick it up myself but seeing the problems that you had with it plus it's thin steel and the stack is too high plus the 2 piece firebox, I decided to look at other alternatives. I have come up with what I think is the best choice for my budget. It's the Chargriller Grand Champ XD Series smoker. At $499, it's $50 more than the Old Country Pecos, I can pick it up for free, and it has all the features I would have had to modify myself on the Pecos. The Pecos is a 14 gauge body with 11 gauge doors. The Grand Champ is all 11 gauge steel. It needs to be assembled like the Oklahoma Joe's but the fire box is ALL ONE PIECE. All the doors are pre-felted, it comes with a charcoal box, a 4 inch stack and pre-drilled holes for up to 3 thermometers strategically placed. The only mod you would need is the temp probe gromet and the final kicker is it has 2 expanded metal grills. I know you just got your Oklahoma Joe's but you should really take a look at this smoker that can easily be purchased at any Home Depot! Yes it's $200 more than the Oklahoma Joe's but it's more than worth the extra cost with all the much better features. Take a look and let me know what you think. Me personally, I'm saving up for it and I know I'm going to be extremely happy with it!

      Hey my friend thank you for sharing this find. I've been seeing the XD pop up on my Instagram feed with other BBQ folks too. I think your logic here is spot on. If I were to do it all again myself, I too would agree that the extra $200 would be worth the investment to have a better built smoker with better options/accessories as well. But since I already have the OKJ my plan is to get as much use out of it as possible and hopefully at some point take a bigger plunge into something with a much larger cooking surface and larger firebox than either the XD or OKJ. I've been looking at the Workhorse Pits for reference.

      @@HuSmokin Yeah I've seen them. You're going to need a loan to tackle those. They're way out of my league. I've gotten into welding also and I plan to build my own smoke eventually.

      Now THAT is next level. Really good you get to do that. I recently got in touch with someone on IG who toured a few places, learned a lot from local pit builders but ultimately decided to make their own. Beautiful looking pit at the fraction of the cost. That said, the XD should hold you over for awhile.

      Lol honestly I was borderline offended by the suggestion to do something like that. Plus that was a Creekstone brisket too! But the savory and sweet did work out surprisingly. My wife and I both tried it after the cameras stopped rolling and it wasn’t half bad. Can’t say I’d try it again.

      Haha! I feel like some would do that for adding donuts to such a high quality brisket. I ain’t mad at it though. 😅
