    Let me share an authentic Jiangnan home-cooked dish that I often eat-steamed meatloaf with dried plums and vegetables. As long as you follow my method, the steamed meatloaf will be very soft and tender. Next, I will explain in detail the key techniques in the making process.
    First of all, choose pork that is 8 parts lean and 2 parts fat. This ratio ensures that the steamed meat patties will not be too greasy and have a more tender texture. In addition, it is best to choose prunes produced in Shaoxing, which have been cut and have no grit. You can smell the fragrance when you open the seal. Umeboshi itself is relatively dry, so a little more than a handful is enough. Soak the prunes in water for 30 minutes.
    Next, prepare some onion segments and ginger, and add an appropriate amount of water to make onion and ginger water. At the same time, chop some green onions, place the white parts and leaves on separate plates and set aside.
    Peel the skin off the pork and chop it into mince. It will be a little grainy and taste better. Put the minced meat into a large bowl, then add a tablespoon of soy sauce, a tablespoon of salt, a tablespoon of sugar, half a spoon of white pepper and minced green onions. Add the onion and ginger water in three batches during the stirring process to ensure even mixing. You need to add 110 grams of water to one pound of pork, and then hold it firmly with your hands to allow the water to be completely absorbed. Finally, add a small spoonful of starch to maintain the moisture of the minced meat, then add 20 grams of cooking oil, and knead evenly with your hands.
    Add the prunes to the minced meat and knead evenly with your hands again. Then put the mixed minced meat into a deep plate and spread it as flat as possible to ensure that the minced meat can be heated evenly. Finally, wrap the plate with plastic wrap, add boiling water to the pot, and steam for 20 minutes. The steaming time mainly depends on the thickness of the minced meat. I used an 8-inch plate and 350 grams of minced meat.
    When the time is up, open the lid of the pot, sprinkle with chopped green onions, and this Jiangnan-style steamed minced pork with prunes and vegetables is ready. The minced meat is soft and delicious. Remember not to add too many pickles. The right amount of pickles can make the soup fresh and delicious, and it is perfect when eaten with rice.
