      Many high end Tempura restaurants utilize a blend of Canola oil and refined Sesame oil.

      @@eatlikealocal Perhaps the dark color comes from sesame? Most refined oils used for frying are nearly colorless to light amber.

    Delicacy? Kakiage are a staple of supermarket prepared goods sections. They're delicious, sure, but not so specialized.
    By the way, the ones with sakura ebi (sakura shrimp) are fun ... try them in Shizuoka.
