You’re not supposed to test directly after eating unless your doctor specifically says to!! After any person eats a meal their levels will naturally rise as the body begins to break down the food into sugars. Normal people’s bodies will produce the insulin needed to bring those levels back down while those with diabetes both type 1 & 2 either do not naturally produce insulin at all, do not produce enough of it, or are resistant to it which can/will cause your blood sugar to stay elevated. Typically you should wait about 2 hours after eating to test as that allows enough time for you to digest the food and for the natural insulin to act (or not act i suppose lol). Blood sugar can be very tricky and can vary from person to person though so it is always best to ask your doctor.
No, you don't even have to do the touching part of your finger anyway. You can use the side of your finger so it doesn't cause problems with using your fingers.
Before every meal and at night, some places though may require a temporary early morning check before knowing you're safe on your own. You could also get a continuous CGM monitor :)

Try buying the sensor patch that can go on your arm it can monitor ur sugar for longer depends on which one you buy there is a monthly one so u don’t need to prick ur finger everyday

My best educated guess and what would just honestly make the most sense in general is that it’s simply an extra precaution they are taught to take to further eliminate any chance of cross contamination or a faulty reading. Something that isn’t necessarily always needed but is encouraged because there’s always a chance the one time you don’t do it will be the one time it messes up and ultimately cost someone their life.
