    Have you tried frying the shrimp shells then grinding that powder for the soup infusion? It reduces the smell and enhances the savory side , most instant noodle soup utilize roasted shrimp powder

    There was this version of the dish that was hai san or seafood, that had squid and some other salty condiments honestly it was my favorite dish growing up next to bbq pork fried rice. The soup on the side to wash everything down or clean the bowl was so good too

    I didn't realize I could find quail eggs canned! Fresh quail egg near me are like $4/half dozen - I will be be buying these!

      Definitely SUPER convenient, and nearly tastes the same. I actually didn't have fresh quail eggs until recently, as my mom always used the canned version

    If i don't have dried shrimp/squid, will the broth still come out delicious?

      Absolutely - but the broth won't quite have that complexity and depth without it. I get all my dried shrimp from khomarket.com/, they're high quality and affordable, unless you just happen to be allergic!

    If you use Korean chubby and round radish rather than daikon, the broth will be sweeter and not have any radish scent.Ahh and I make crispy fried banh tom for mine.

      @jamesheng1878 yes me. No one really measures and you can estimate with experience but you can also see how much msg is being dropped into the soup.
