    Japanese people tend to be much more accommodating when it comes to modification and experimentation with their dishes. I've had more wild and 'weird' variations of ramen and sushi and other Japanese dishes within Japan than I've had elsewhere. Also, most Japanese people tend to be aware that ramen itself is a dish that was imported and modified from Chinese dishes.
    Edit: Additionally, there are ramen restaurants absolutely everywhere in Japan so many places will have their own variation just set themselves apart and attract customers who might otherwise just go to their local joint.

      Yep, there is a shrinking ramen chain my area in California that fried a whole block of gyudon beef that you can crack open over a bowl of tomato ramen.

      Japanese culture has a pretty significant focus on pragmatism. Whining about stupid shit like "waaah you're not making this food in the way they made it 100 years ago" is primarily a western thing.

      I don't think it is just Japan, but I think wokeness in the West is where complaints about things like "appropriation" mainly come from. As an Asian myself, we generally tend to appreciate when others are interested in our culture 😁

      @@hsolanki7971 it sucks because the US used to be like that before the woke mind virus started taking over. It was the whole point of the concept of the "American melting pot" -- people would come here and share their culture, and then people would take aspects from all of the cultures around them and create new things from them. Music, food, language... Appropriation and adoption of other cultures is one of the coolest things humans can do, and the results are the main aspect that makes a multicultural society worth the effort it takes to maintain.
      Unfortunately the growth of this attitude about sharing culture peaked in the 90s/early 2000s. Now we are going backwards because the woke left wants everyone separated and divided and grouped.

    Gotta love how he goes "this is NOT fusion", and then goes on to describe exactly what fusion is, and making three (incredibly tasty-looking!) fusion dishes. Josh, it's okay to make untraditional food. It's okay to make fusion food. Fusion dishes are not "lesser" than traditional ones; just different. Well cooked - it looks tasty, and while I doubt I'll ever make these exact dishes, I definitely learn a lot from just watching and paying attention to the techniques!
    I, for one, would be very happy to se this turned into a recurring series, with fusion versions of different dishes.

    The Mexican restaurant down the street from my apartment just released "Shrimp Birria Ramen" as a menu item earlier this week. I'm too broke to go try it yet but I'm hoping to have it as a celebratory dish when Finals are finished! I can't believe I'm learning of Birria Ramen twice in one week!!

    I have had leftover butter chicken with pasta. I have also made butter chicken mac n cheese. I feel that once you have mastered the basics, you can mix and match and have fun.

    The birria broth also needs cloves, cumin and allspice (we call it "pimienta gorda" in México). For better results boil the chiles beforehand, puree them with all the boiling water you use it and filter it to avoid the hard parts and seeds of the chiles. Some use tomatoes with the chiles to puree everything.

    You’re my favorite chef to watch, and I love everything you do, but wish you still shared more recipes that are more easily accessible to make. I followed your butter chicken curry recipe to a T and it came out incredible, I served it to my friends and they absolutely loved it too, and it only took one pan and a bowl to marinade the chicken in.

    Lasagna is a great dish as well to mess around with, for me its only been ingredients & spices (apart from noodle, tomato (sauce) and cheese plus something creamy for the top layer) that i messed with, but i am sure one could extend that. (i got into this via glas bowls for freezing/ meal prep, and that is one dish that is great for it, but can get boring if it is always the same)

    I'll just say this. The whole thing with Ramen is that there's no such as thing as a "traditional" version. Ramen is mainly a dish you put to together with any ingredients you have lying around in your kitchen, and that's ALWAYS acceptable, no matter who tries to tell you otherwise. Because here's the one rule with cooking that some people just refuse to accept: "There are no rules." So go out there, do what you think can be fun and enjoyable and don't let others put you down.       I agree: there are no rules. People who gatekeep food and whine about tradition are stupid. I just wanna eat things that taste good, and if something untraditional tastes good I'ma make it and eat it. All the whiners can whine to somebody else.

      no no no, there's definitely a few rules but it's more a framework:
      1. Must use ramen noodles (you'd think this is obvious but many use rice)
      2. Must use a tare (seasoning oil) and a broth
      3. Must have toppings
      Otherwise there is absolutely no reason to call it "ramen", yes it's important to be flexible but it's also important to maintain the spirit of the dish/words for clarity. Otherwise why wouldn't I call a spaghetti meatball an italian chow mein

      @@AlphosNZ to be fair you would call spaghetti spaghetti even if it was in a white sauce because the noodles are spaghetti noodles
      Is there another word for ramen noodles without broth? Idk about Japan but in the US many people strain instant ramen noodles and then add the seasoning packet to the strained noodles... I think it's weird but to each their own lol

      @@AngryAlfonse where I live, we just call instant “ramen“ noodles as instant noodles over here. Ramen is used for the ones made from simmered broth and tare.

    I think the American culinary industry needs to embrace its own identity (outside of hotdogs, burger, and BBQ). The beauty of American cuisine is the fusion of foreign food. It should be OK to say "this dish is inspired by Lebanese, French, AND American food". Love this dish - be proud of what you made.

    YES THANK YOU. Nearly every birria ramen that I've seen spends a lot of time with the birria but then they throw in instant ramen as an afterthought. I am so glad you started with using legit noodles and not the cheap instant stuff. Even spaghetti would be better than cheap instant ramen noodles

    there's a couple spots near me that have variations on birria ramen, and while i haven't tried any of them yet, they look absolutely incredible.

    I hate all the gatekeepers. This food is AWESOME! Traditional isn’t a flavor, it’s a history lesson. A super cool and usually delicious history lesson, but man, people miss the ramen for the noodles.

    I had birria ramen at Bar Dojo in Edmonds, WA. It was PHENOMENAL and I think about that dish a lot!
