Vietnamese Crispy Dumplings (Bánh gối/ Bánh xếp/ Bánh quai vạc) | Helen's Recipes

  • Ingredients:
    For the wrapper
    300 g Gyoza skin (1 pack 10.5 oz), OR
    270 g all-purpose flour
    1 tsp baking powder
    1 tsp sugar
    1/2 tsp salt
    150 ml water
    For the filling
    500 g minced pork
    50 g glass noodle, soaked in warm water 5 mins and chopped
    15 g woodear mushroom, (0.5 oz) soaked in warm water 5 mins and minced
    2 tbsp shallot or white part spring onion, minced
    1/2 cup carrot, shredded/minced
    salt, sugar, pepper, stock powder to taste
    12 quail eggs, hard-boiled, peeled and halved

      That is so true, esp. in Hanoi. I've been there for 5-6 times but only this time I got to eat the most delicious food (thanks to a great local friend cum tour guide). And most of them are literally food on the street ^^

    Reminds me of samosa, Indian vegetarian dried dumplings. If you're making your own dough, add a bit semolina flour, maybe 1/4 cup to a cup of flour. It'll make it crunchy.

    Helen you got me to thinking!! when you open your videos you don't say where you are (I know you have said Germany) so I take the "background" for granted and just enjoy your cooking - but this video when you show the Vietnam street photos I saw people wearing cold weather jackets and that got me to "thinking" because I always thought of Vietnam as hot and humid - that made this video a special treat because it showed your good food and got my mind in gear

    I find that street foods are so much better when it comes to asian foods! Even here in the US some of the best foods are not necessarily that fancy looking. I rather pay for good food than ambience anyways! :) awesome recipe as always Helen! I've tried so many of your recipes.

    Thank you Helene for sharing your delicious recipe. I really love to try that because when I was in Hong Kong on my holiday I use to eat that sampling and the sesame balls. It was very delicious.
    The only think is I have not catches up all what you said and done.
    You made it very beautifully . Both of them.

    Hi Helen! I watched many of your shows. thank u very much for the very informative and step by step recipes. I've been to vietnam twice and I may say the food is amazing. There's not much local choices in my country. I wanted to have my own vietnamese small restaurant here in the Philippines. lol. soon hopefully. nonetheless, if you come visit the Philippines, let me know and if I'm available, i will tour you around the metro. =))

      You mean egg roll? I don't believe you can fry spring rolls.. and a spring roll/egg rolls are two different food items. Yeah the dumplings pretty much are the same filling as the egg roll.

      yeah it was probably an egg roll that I was going for. My friend's mom gets these really good wrappers that are very thin and she bakes them rather than frying them.

      pickledshoe It's alright. A lot of people think spring rolls and egg rolls are the same thing.. sad.. they are very completely different. Some Americanized restaurants actually put spring rolls as one of their appetizer items on their menu but in reality it is an egg roll that they meant to put down.

      NeonHao actually spring rolls can be fresh or fried. There are so many variations from many different cuisines. For instance, in Chinese cuisine it's a fried roll called "Spring Roll" commonly eaten during the Spring Festival. There are also fried and fresh Vietnamese rolls. Even egg rolls get complicated, because in various cultures it can mean something completely different. Chinese "egg rolls" are actually those sweet wafery rolls you can buy in tins. American Chinese egg rolls are thicker, savoury deep fried rolls often made with wheat flour. Those flaky Chinese spring roll pastry are often made with flour and water, whereas in other cuisine they could be made of rice paper. I think you could safely say if it has egg in the dough, it's a savoury egg-roll, but if it is simply a flour and water dough, it's probably a spring roll or maybe even something else.

      Ginevra Peterson Also, just to add to your comment, rice wrappers are not dough-like fyi. It's actually the rice from the actual fields that they grind up and use it to make the rice wrappers hence "rice wrappers." I know this because my mother's grandmother worked in the rice fields and pretty much made her own rice wrappers. As for Chinese egg rolls, the wafers have nothing to do with the actual egg roll wrapper..wafers are made from flour while egg roll wrappers are not. I'm not sure who's telling you the ingredients to these products but you definitely have it wrong. They are called egg rolls because the wrappers you seal with egg yolk when sealing the roll.

    Love it, will try it, I tried your caramelized shrimp and pork recipe and it was delicious, the next time I make it I will take photos or a short video. I took the shells off the shrimp because I was scared to eat them. Now with this recipe, I am definitely going to make it too, but is the quail egg necessary or can it be opted out?

    Ngâm mộc nhĩ với nước lạnh tốt hơn chị ạ. Vỏ bánh của chị hơi nhỏ nên bánh cũng nhỏ, nhìn đáng yêu quá. Bánh ở Hà Nội to hơn nhiều nhiều.
    Các bạn ở Hà Nội có thể mua vỏ bánh gối trên phố Lương Văn Can :)
