Link in BotW is actually still left handed kind of, every desk in the game has the inkwell on the right side except for desks Link uses, where the inkwell is on the left side. So he still writes with his left hand. In Hyrule Warriors Age of Calamity, cutscenes show how all the knights are trained in groups, because Link wasn’t appointed as the royal knight yet, he was just taught to use a sword in his right hand like everyone else.
As a left handed person, I find it relatable because sometimes you just have to act like your right handed. For example, I’ve gotten use to playing games on keyboard normally with WASD. Although I really hope Link goes back to wielding swords in his left hand.

I'm left handed. as weird as it sounds, I was absolutely devestated as a 16 year old when Twilight Princess for the Wii came out and Link was right handed, with no option to make him left handed. It was why I bought the gamecube version instead - he was still left handed there, and for me, Link was like a weird icon? Like of course most characters are right handed and honestly, it never really mattered which handedness they are. But Link being such a prominent character and even being left handed made me feel... I dunno. I don't wanna say represented, because that is just kinda weird to think about. But it made me happy as a little german boy (hell, I thought his name was Link because Left is Links in german - thought they just removed the s).
So now Link being purely right-handed doesn't sit with me. I got it for Skyward Sword, you wanna swish and swoosh the wiimote, but afterwards? Feels weird. like removing a tiny quirk I really liked for no reason.
Funnily enough, most left handed people I can think of are from fighting games - either by being forced left-handed like Baiken (sorry babe, you're one of us now) or subtle left-handedness like Siegfried in Soul Calibur (the rare times in cutscenes when he is holding his sword in one hand, it is in his left).
Like again, honestly it doesn't matter which handedness characters have. Doesn't change a thing about their personality, which is more important. But a random little quirk like that is pretty nice sometimes.

Since you were talking about Dark Souls and the Abyss Greatsword you could've talked about Artorias. He is cannonically left hand and when you meet him he has lost his mind. BUT he has broken his left arm forcing him to fight with his right hand so that people would actually stand a chance at taking him down since he was revered as probably the most skilled swordfighter of his time. This also being the reason why in Dark Souls 2 his sword is stronger in the left hand.

Dark Souls has a habit of letting you fight people who should be way out of your playing field by evening things out via lore-based handicaps.
Artorias probably has the most of them out of everyone.
He was not only just out of a fight with another Boss, where he got horribly beaten (Manus, Father of the Abyss, ironically another character who fights with his left hand)
but also lost his mind, his left arm, which not only meant he had to fight with his offhand, but meant he couldn't use his shield at all.
And was separated from his companion Great Grey Wolf Sif.
The fact he's been through all of this and still manages to beat your ass with style is probably a big part in why he's considered one of the coolest most memorable bosses in the series, even the Devs seem to agree given how he was referenced in DS2 and 3.

Another interesting thing to note: Every game is inherently more suited to either a left or right handed person, and we have no idea. Most controllers are also asymmetrical, and so by definition each game will either give an advantage to someone who can use the control stick with their dominant hand, or somebody who can use the face buttons with their right hand. And thus, depending on the game, right or left handed players will theoretically have an advantage

As a lefty, I’ve never had a problem with conventional controls, probably because the initial learning curve of game controls is completely disconnected from any real-world counterpart when it comes to muscle memory (although I can imagine having a bit of an issue in vr). Seeing left-handed characters is always nice but for me I would just like it if more games with customisable avatars had a left handed option. Your character is supposed to be an expression of you so it just feels a little weird watching them doing everything in a completely opposite orientation to what feels natural, which is part of the reason I tend to gravitate towards dual wielding weapons.

I get that you're joking with the first sentence there, but to be honest, I do think it sucks that characters with disabilities (like being in a wheelchair, or, yes, lacking hands) are barely seen, and when they *are* found in games, a lot of the time their disabilities either make them absolutely useless at what they're doing, or even outright jokes.
Like, yeah, someone lacking hands or even their whole arms is going to make things harder for them, right? But, at the same time, in worlds where magic exists, there's other ways for them to go about the world, like using telekinesis. Prosthetics are also an option, and those are the most represented--which isn't bad at all, for sure, but it does also feel weirdly noncommittal.
Sometimes, it'd also be nice to see more characters who don't even need to compensate for it with something else. Baiken I think is a really cool example: she has one eye, she has one arm, and instead of using magic to rebuild her arm, or telekinesis to wield her sword, or anything like that, she's simply just Going To Kill You With One Arm. She's badass, and her physical disabilities don't stop her from being hot, from being strong, and from smelling like 5-day-old barbecue.
I'm not someone who's physically disabled myself (i got those mental disabilities though hell yeah), but when I was a teenager, one of my friends only had one hand--he was born like that too, with only a very small sphere of skin connecting to his elbow. Some things were harder for him as a result, but it's not like he needed everyone to carry everything for him, or that he complained all the time about his disability, or anything else that basically goes "my life is hard now because being a disabled person means my whole life is ruined!!!!!!" He was tough, and he was himself, authentically.
As a kid, I assumed that having a disability pretty much ruined your life. Once I met him, though, I realized that wasn't really true--sure, maybe you could be a musician and go deaf, or be an artist and go blind, but at the same time Beethoven was deaf, so maybe even that's just an assumption made by the lack of proper representation for people with disabilities.
All in all, I think representation is really important, in all ways. I'm glad Rad Chad the Mad Lad (and to some of us, our dad) talks about it as much as he does, because I think he genuinely makes a lot of fantastic points.

Weirdly enough the only game where I've seen a decent amount of left handed characters, of all places, is fucking League of Legends. I think this is mainly because an entire team in a game starts in the bottom left corner, meaning their character will be facing top right most of the time and if there is a prominent feature they want to be seen even from the back, it's better to put it on the character's left side. The most obvious example of this is the champion Kayn, who's left arm and shoulder is entirely corrupted by the darkin scythe he wields exclusively with his left arm. Funny enough, once the darkin in the scythe, Rhaast, breaks free he's also fully left handed.
Edit: I only just realized how ironic this is since League's controls make it very hard for a left handed person to play, you'd think that would've crossed their minds when they made it since that could be an easy fix but somehow no

In the inazuma eleven series (an anime football rpg on ds/3ds) the first 4 games in the series had all the action buttons on the right side of the touchscreen. But in the fifth game they added the option to move the actions buttons to the left side of the bottom screen, which I, a lefty, enjoyed very much, because this meant that by using the action buttons i wouldnt cover the bottom screen with my hand and obscure the real time footy action.

Another thing I have been noticing is eyes. Or, specifically, when a character has one eye. I take a notice every time I see such a character (because I myself have one disabled eye), and about 8 times out of 10 the missing eye is the left one.
However, I think that is not without a reason. In my theory, it has to do with people being mostly right handed. Since people historically would cut from the right side more, the left eye is more often in the way of a weapon than the right eye. Thus, people lose their left eye more often

Also, I'm kinda used to everything being right-handed at this point. I can use WASD with the mouse in my right hand just fine. Same with controllers and stuff. But that is specifically gaming-related - stuff like scissors I can use, but it is annoying to not see the actual line you're cutting.
But I also just kinda don't think too much about it at this point. I'm used to this. And mostly it is just minor things that are slightly annoying.
The worst part is that despite being left handed, my handwriting isn't much better with the left than with the right hand, lmao.
That being sad, that is just my experience - there are probably left handed people out there who have bigger problems than I have.

Same here, with how used to certain things being right handed I've gotten it might even be more accurate to call me mixed handed rather than left handed. Some actions I prefer using my left hand and largely it's what's more natural to me but I'm accustomed to using my right hand for other things.
In fact, I remember when I used to play Wii Sports and Wii Sports Resort I'd have to custom set some of the handedness preferences on my mii to be different depending on the sport, like bowling with my right hand but batting with my left.

Also left-handed villains almost don't count for me anymore after realizing how surprisingly prevelant it is for an entire squad of right handed people to go up against a villain, who just so happens to be the only left handed person in the cast.
Makes me wish there was a piece of media where it's the complete opposite, where everyone is left-handed EXEPT the main villain.

I feel weird in this regard because even though I'm left handed and I do almost everything with my left hand, I hold two handed guns specifically with my right hand on the trigger, because to me aiming takes so much of my concentration that I have to use my left hand for it, not to mention that, to me, having the left hand on the barrel makes it feel like the leading hand, kinda how it is with swords. I also never minded using the Wii remote and Nunchuck as well as the keyboard in the way that rightos do.

As an engineer- most devices that are used in our workshops are right-handed oriented. That isn't a small issue- it is actually safety hazad. You have to operate those tools precisely- so you use your dominate hand, but if machine isn't ambidextrous usually you either:
    -work in unnatural position
    -are not protected.
Some hand tools even have safety features made specifically to protect you when you use your right hand (for eg. Some agle grinders). I heard that lefties report more accidents at workplace, and when you have contact with production environment you see why.
