  • Okay, so let's say you've got your sourdough starter. You're making bread (or you plan on it), but now you want to start doing something with the stuff you throw away when you feed it. Here are some of my favorite ways to use my sourdough starter discard. A real deal sourdough hack, to using pretty much all of your sourdough starter while leaving just enough to feed it.

    Banana Bread:
    1 cup (224g) unsalted butter
    1 1/2 cups (360g) granulated sugar
    2 cups (300g) all purpose flour
    1 teaspoon (5g) baking soda
    1/2 (3g) teaspoon kosher salt
    3 bananas (ideally overripe) mashed with a fork
    2 whole eggs
    1 teaspoon (4g) vanilla extract
    1/2 cup (145g) mature sourdough starter
    Pancakes:
    1.5 cups (225g) all purpose flour
    3 tablespoons (40g) brown sugar
    2 teaspoons (8g) baking powder
    1 teaspoon (6g) baking soda
    1/2 teaspoon (3g) kosher salt
    1 cup (215g) milk or almond milk
    1 egg
    1/2 cup (145g) mature sourdough starter
    Cookies: • The Ideal Chocolate Ch...
    (use this recipe and add 1/4 cup (72g) mature sourdough starter to the dough)

    tip: use browned butter and dark brown sugar.
    if you have time, toast the flour until it smelled nutty in a pan over the stove and
    roast bananas sprinkled with salt in the oven until golden brown before mixing in the batter.
    add roasted chopped walnuts.
    best banana bread I've ever made

    Do not apologize for all the sourdough! I tried your croissant recipe and it was fantastic! A true sellout for the local farmers market. I have believed the myth that sourdough flavor comes from the air and stuff - but NO! Use RYE and WOW! your starter suddenly becomes impressive! I LOVE YOUR RECIPES!! Keep em coming!!!

    Man, I dare to say that these pancakes are the best I've ever eaten in my whole stinking life. I make them every single weekend for me and my mom and they are absolutely scrumptious. They're also very versatile, as they taste amazing with any add-ins (blueberries=glory). And believe me, you won't get any sourness from the sourdough starter! Well done, Josh

      You cannot really convert homemade sourdough to commerical yeast because it depends on how many viable yeast cells you have in your sourdough and this varies from time to time. It's basically about time: If you have a lot of yeast, your dough will rise much faster as if you have fewer yeast cells. My advice would be to let the dough rise over night, so there's always enough time for the yeast to grow and ferment the dough.

      Sadly, sourdough starter is always a little bit more liable to change than commercial yeast. It's not as reliable or fast, but converting recipes is totally doable as long as you have a little bit of extra time on your hands! It depends on how much starter you add to the recipe, the temperature of the room, and even the temperature of your ingredients. It takes some experimentation and flexibility! As Mr. Gerdes said, overnight fermentation is definitely a good option just to be sure the dough takes its time. Even with perfect conditions, sourdough will take longer, but it's worth it in my opinion. Hope this helps!

      In many articles/videos it's advised to use 20% proportion of sourdough to flour (if you have 1kg of flour, then you'll need 200g of starter). If your sourdough seems to be weak and you keep failing, you can add 1-2g of fresh yeast (or equivalent in dry yeast) to your receipe to help your dough rise - it helps to provide more reliable results.

    So yesterday we made crepes with the leftover day 1 starter, DELISH!! Today, I thought, why not use day 2 starter to make banana bread since there are frozen ripe bananas in the freezer. Everything is going fine until I spoon in half the flour and notice the mixture is way too thick. Realizing I have forgotten to add the bananas I grab the ziplock of thawed bananas and start to mash them.....except they don’t mash. I stood there wondering what cruel alchemy had ruined my bananas when I realized I was attempting to mash peeled Asian eggplant😳 only 2/3 of a banana is in the house. I drained a can of pears and chucked them in. The batter spent the day fermenting. Tonight I dumped the batter over a compote of blueberries, brown sugar, butter and Sailor Jerry’s Apple rum. 45 min at 475 and I have this amazing upside down blueberry,banana, pear rum quick bread /bread pudding. The texture of the crumb is fabulous. The starter in the batter with the additional 7 hrs of fermentation gave spectacular results. I am so glad my 15yr old daughter recommended you. p.s. She named our sourdough starter Sully😁

      LMAO - I forced my wife to listen to me read this because she forgot the bananas in banana bread last time, and she's made it a 100 times. When we go the rum part, her eyes lit up. Good dough make GOOD FOOD.

    Have made all three of these recipes and I love them!! I will say, for the banana bread, mine rose over the lip of my loaf pan by almost half an inch in the oven, which had me worried the first time around, but it basically just holds together like a soufflé and never spilled. Also the bananas, with the salt are literally so, SO good I may have cried (maybe it’s the quarantine, idk). The pancakes are literally perfect every time. I freeze most of them immediately after making them and they hold up perfectly when microwaved for 30-45 seconds. The chocolate chip cookies were also amazing, though I had to bake them for almost an additional 8-10 mins, otherwise they were gooooooopy/underdone.

      I had the exact same experience with the bake time for the cookies. But after adding the extra time, they were wonderful. I also worried my banana bread would spill over it rose so much, but it held together and was delicious.

    1:26 - That was the best banana bread I ever baked!!! Thank Mr. Weissman! I too his overnight batter suggestion. I refrained from adding the baking soda until the morning by folding in gently along with a 1/4 cup of buttermilk for a lil more hydration and to give the soda a lil' sumpn sumpn to react to. The slice banana on top is genius! Although mine sank a lil underneath the rising dough it bananified the batter all the more and added a banana jewel caramelized cooked texture to the proceedings. I think that although it didn't taste sourdough like the starter intensified the banana flavor. I will never NOT make banana bread the Joshua Weissman way! 💪🏾

    I love these sourdough videos, and I almost cried when you said no more sourdough. Does that make me weird or too attached?:')
    Oh and tip for the banana bread I always like to leave an overhang of parchment paper so I can easily lift it out of the pan. Loved these recipes, but what exactly does the starter add to the cookie recipe?

      Haha, don't worry the sourdough videos aren't stopping. I just don't want to constantly put out sourdough vids. As for the cookies: The Sourdough Starter in the cookies just add a little bit of extra flavor and a super subtle tang.

    I made the banana bread in a wooden baking frame with appropriate 3/3" thick walls. It took me about 1 1/2 hrs 'till the inside was baked, but the top was burnt at this point (I baked it on the middle tray @ 180°C at a pizzasteel plate with baking paper between the steel and the wooden frame. The Bottom got crispy but not as burnt as the top. Next time I'll use the bottom tray and pre-heat the wooden frame for longer, It keeps heat very well, like a Dutch oven. I also made the mistake to move the bread so it has sunken in a bit. For my starter I made a 1:1.5:1.5 levain also from a joung 1:4:4 starter (90 Manitoba wheat & 10% rye). The acid load was very low so it didn't tastes sour at all. As long as your starter is young and isn't like 100% rye you don't get too much acidity, so I'd replace commercial yeast with my starter and using the typical 10-20% of the final weight of the bread.

    You know, I have tried probably dozens of banana bread recipes over a lifetime and I must say this is the moist-est banana bread recipe of them all, and without yoghurt/sour cream, just very simple and basic ingredients. This recipe has now topped the charts and I reckon it will be hard to beat it. Only that my banana halves sunk to the bottom by the time it got out of the oven :p

    im on day two of making my sourdough starter, and sure, it isnt sour yet BUT i still used the discard with my banana pancakes this morning :D (I just skipped letting it ferment the batter) had a bunch of them getting overripe so i just mushed them and added them to my usual pancake recipe in addition to the discard and BOOM. Softest, tastiest, enriching pancakes that make ur morning a good one :)

    I love your videos and your technique, and you have the uncanny ability to make me understand everything and actually make me *want* to do things!! Kudos for that!
    I will admit that I already have my sourdough starter ready and that I have used a slightly different process (of course it is quite similar to yours!), but your content is truly captivating!
    That said, I have a question: when you say that I can use my starter for any baked good instead of the classic active dry yeast do you have a ratio that I can refer to? Like, how much sourdough starter equals how much active dry yeast? Or a flour to starter ratio would be pretty helpful too, just to help me adjust my recipes!

    I subscribed because despite barely eating any sourdough.. Its like one of mahh fav!! And baquettes!! I dont know why some people (like everyone around me because probably its not a common bread in our country) doesn't like it.. But I always feel heavenly when I eat them!! 💓💓💓

    When you add the directions can you add the temp of oven and time? I’d greatly appreciate it. I’m making the banana bread and I had to rewind a shameful amount of times 😅.

    I’ve also tried your egg nog and hot chocolate and wow!!!! 10/10! I also started sourkraut yesterday. ☺️

    I used the pancakes recipe and added half a teaspoon of sugar (to activate the starter) and it made some of the tastiest and fluffiest thiccccc pancakes I've ever made, they were like 3/4in. Thiccccc
    Works great with chocolate chips

    I love all his professional grade cookware, it’s so impressive. I had 2 successful sour loads out of 5. Summer days isn’t the best for a sourdough starter 😒

    I made your banana bread today with a banana I took out of the freezer for the top and some local honey swirled into the dough as well as drizzled on the top. Delicious does not even come close to describing this. I let the dough sit over night covered with a damp towel and added the extra banana, honey and walnuts before baking. The only thing I did differently is I only used about 3/4 cup of sugar including the honey. the banana flavor really shines in this recipe.

    As a bread baking newbie let me say I am SO GLAD that I found your channel! Re the banana bread recipe in this video...
    Trying to be sugar-conscious, so I decreased the sugar from 1.5 cups to simply half a cup. I also added half a cup of cocoa powder during the creaming stage, and chopped walnuts. The result was admittedly a hair less sweet than ideal (maybe a few drops of stevia in the bananas next time? Banana were also on the firmer side, so less sweet...), but otherwise both delicious and gorgeous! The only issue I had was that it took nearly 75 minutes for the loaf to not be wet inside! But as I have yet to buy instant read thermometer, it could be that my oven is not as hot as the temp knob indicates. Keep up the amazing content!
    ALSO: A potato masher works well for mushing a firmer banana!

    I made the banana bread and it is DELICIOUS. My favorite part is the banana/honey/salt on the top of the bread loaf. It looks great and tastes better.!

    Josh, I need you to know that Texans have a very different idea of a 'regular sized loaf pan'. I put the banana bread in a regular sized loaf pan and it overflowed. So note to fellow bakers - LARGE loaf pan.

    Thanks for this :) I woke up my year old starter from dormancy and am getting it ready to bake. Of course this means getting back in the cycle of feed/discard. I've been making funky ass, chewy ass Chinese scallion pancakes by just pouring the discard in a hot pan with sesame seed and any allium I have. Thanks for the extra suggestions!
