I'm from Putignano in Puglia and I must say I prefer bufala over mozzarella, but I definitely prefer stracciatella over bufala. I love eating it in a very simple way: on a piece of dark bread ("segale" or cereals) with Parma ham.

OMG you will have the best food experience of your life. I spent 3 months in Firenze across from Mercato Centrale, and that city is heaven for food and the quality of light. Fresh goat cheeses rolled in candied orange peel, Pecorino with smoked pistachios, 5 year aged parmigiano, and if you walk around, you'll find little places that each have that one thing they do better than anywhere else. I developed a list of all my favorites, and you will, too.

There is a long feud between Campania and Puglia for the original fior di latte!
Usually in Campania in the north of the region there is the production of mozzarella di bufala, and in the south there is fior di latte, best one is said to be made in Agerola!
Here in Italy there is a long feud between every single neighbor about every single dish to be honest hahaha

But do not forget that also in the South of Campania (in Province of Salerno, in the valle of Sele) there is massive production of mozzarella di bufala.

This is a great video! The best mozzarella I ever had was in Lecce, where I lived for about 9 months. Soooo good! On pizza, mozzarella di bufala (uncooked) is my favorite!

I'm from Naples, i have to admit that bufala is not particularly suitable for pizza because is a bit more soaky than fiordilatte, i actually think they use fiordilatte chease for the pizza, bufala is just to garnish it

Usually fior di latte, bufala when I want something special, burrata when I go to Puglia. ;-)
I prefer mozzarella. Eaten in CAPRESE WAY: with tomato, oil, salt, basil and oregano.
One of the best way to have a good match with the buffalo mozzarella is in freshly made bread cut in half and filled with cold cut spicy salami (spianata piccante for example) and slices of buffalo mozzarella! Nothing else! I never get tired of this match! 😁 highly suggested
Non c’è proprio paragone tra fior di latte e mozzarella di bufala. La mozzarella di bufala ha carattere, ha un suo gusto vero e proprio.
PS: Sempre interessante poi notare come gli americani quando arrivano in Italia, si accorgono veramente come sono i veri prodotti italiani. :)

Great to see you introducing Americans to the differences between mozzarella di bufale and fior di latte.
And - please note that when you make a caprese, you NEVER put vinegar on it! Only top quality extra virgin olive oil and a pizzico of oregano (optional).
Very often when I see it on a menu in the States, they put balsamic vinegar all over it and for me that completely ruins the delicate flavors of the mozzarella.

I know traditionally , Koreans love to use their kitchen shears to snip/ cut just about everything; but who knew it would be such an effective way to slice up da pizzzzza. 🙌😎💜

@@TheQKatie thats lovely. me on the other hand i start missign the way we live in puglia. oh btw in my Town we have lots of buffalo and you will find the farmers with a little shop in the front selling buffalo mozzarella and its very cheap. like last time i was there with 5 euro they gave me a bag with 7 buffalo mozzarella.if you have spare time have a look :) . the town is next to the lake but we have also Lesina Marina on the coast.

As an Italian I find your videos so interesting… the bufala has an undertone of “wild” that is just missing in mozzarella fior di latte.
I feel compelled to a correction: mozzarella (and burrata, or mozzarella di bufala) is not a cheese, or "formaggio". In Italy they are called "latticini" and is a completely different category, absent in the anglophone world, possibly close to "whey cheese" but I am not really sure.
Latticini, like mozzarella, have an extremely short shelf life: after being produced in a caseificio, they would gradually lose taste and quality, spoiling themselves at the end of a week. The "mozzarella" usually sold in supermarkets has nothing to do with the true one in terms of taste, quality and chemical composition. A cheese (formaggio) is usually seasoned to allow a much longer life.
Nono sono formaggi comunque, poiché prodotte con latte e grazie alla precipitazione della caseina, seppur giusta la tua precisazione in questo caso è sbagliata, la ricotta è un latticino siccome è prodotta con il siero rimasto dalla produzione(seppur allungato con il latte a volte)

Katie if you like mozzarella, you should go to Aversa (Caserta province, north of Napoli) or Battipaglia (Salerno province, south of Napoli). Both in Campania (there is a reason why the trade mark "Mozzarella di Bufala Campana" exists, and the reason is similar to the one that makes you go to Andria to buy Burrata). You will thank me later. Love your videos...as usual! Cheers
ohhh and I was forgetting....when you are there...ask for some Provola. With this word, in different parts of Italy, different kind of cheeses are intended. In Campania, Provola is a smoked fiordilatte (but it is also made with buffalo milk). In Naples provola is the queen of stuffings, I personally love it on my home-made focaccia (ok...now I miss it ...)

Personally something that i love about bufala is that it has a more sponge-like consistence, with a slightly harder outside, which i believe is another result of the stronger fermentation given by the higher presence of nutrients. Instead, in the fior di latte you can feel more the 'pasta filata', the processing that makes kind of strings throughout the whole ball, thus making it more even.

in molise there's a particular kind of mozzarella called stracciata.
do not confuse it with stracciatella, that is filaments of mozzarella like the filling of burrata.
stracciata is a long tripe of mozzarella, is typical of agnone, carovilli and capracotta, all countries near Isernia.

I must try the Bufala. I accidently bought goat mozzarella recently and it had the very distinctive and overwhelming taste of goat. I'm not a fan. I'm hoping the Bufala doesn't disappoint. Love your channel, BTW!

I love burrata with filetti di alici di Cetara, buffalo mozzarella on pizza margherita or with prosciutto san daniele, fior di latte with tomatoes in summer, a wonderful caprese!
Stracciatella is frayed mozzarella with heavy cream. Btw I may suggest to try scamorza as well and dont't forget to start eating it from the head; it is the most coveted part of the scamorza in every family in Puglia :D

I use fior in Bolognese lasagne, bufala on a caprese and panino, and burrata on pizza.

Hello, nice video, which touches on a very important topic and that I always see, I live in Pozzuoli near Naples, the province of Campania ^^.
I'll tell you another interesting fact about buffalo mozzarella: there are two types!
There is that of the Caserta type and the Salerno one, the difference is that the first has a more salty taste, but always very light, the second that results in making the entire sweetness of milk very much.
Do you want advice on another fresh cheese to taste and fall in love with? Try the smoked provola (provola affumicata), the fresh one. Like mozzarella there is both cow and buffalo mozzarella, but buffalo mozzarella is still difficult to find.
My favorite way to eat mozzarella and fior di latte is with bread! Even for vegetarians, just put two leaves of fresh salad in a sandwich, a slice of large salad tomato with a drizzle of oil and a nice slice of mozzarella dripping with milk and you will have a fabulous sandwich for the summer! Small trick: put the slice of mozzarella on the bread when you put all the ingredients in a sandwich, so when you bite into bread it absorbs the milk and the sandwich is even tastier.

I was writing the same. I'm from naples and the mozzarella could be cow(latte vaccino) or buffalo (better and bith caserta or Battipaglia are good, you need to taste to find what you prefer).
Fiordilatte is the original ingredient on pizza napoletana (bufala is too juicy).
Provola is better then fiordilatte to me. 😉
Burrata id amazing too however my favourite is buffalo mozzarella.

i'm lactose intolerant (i know, *sigh*), but nowadays i can find all kind of cheese that are lactose free. I understand is not the same thing, but i now can enjoy all the three of them and i'm so happy because i like them all!!!

Pizza al pomodoro con prosciutto s. Daniele e bufala in uscita (funziona anche con mortadella e bufala)

Mangio mozzarella 3 o 4 giorni a settimana, ma capita anche che, in genere il venerdì, sale un produttore campano qui da queste parti, e allora quelle 3 o 4 volte diventano 4 o 5 😅
Ok Katie so, you just missed on a 4th.. and a 5th type of mozzarella: "il nodino" and "la treccia", the former, when made properly and eaten fresh, must almost "sound" between your teeth while tha latter is for cooking purposes. The nodino is a true different experience which one like you cannot miss.
So I give you the advice to head to the small city of Gioia del Colle where those are made (relatively close to Trani actually).
There you'll find different production methods too (both from cow milk).

I find it wild that you wrote a book on cheese but have never tried buffalo version. 🤔 I understand that not all cheeses are available everywhere, but like...I'm from Finland, and even we have had this cheese on sale for over a decade.

well, you know, fior di latte is a word we use for a few things actually, also the vanilla ice-cream and other white foods. PS: pizzaiolo/pizzaioli, with a i more!
Strain it first. For pizza it's better to use the drier slab mozzarella.

The best cut for mozzarella for me is the fresh “bocconcini”. But You have to try mozzarella di bufala affumicata, it’s simply the best but I am not sure you will find it in Puglia. I am from the land were mozzarella di bufala originated: if you have the chance to go to south of Campania I can give you some hint where to find the best of the best of buffalo mozzarella, you won’t regret !
So you discovered the bufala world! A little tip: you'll have to find an ice cream shop whose makes bufala fiordilatte ice cream. Trust me ;)

Many italians would prefer Bufala if asked to pick one, but it's not the standard mozzarella: for one, it's more expensive. There is no need to choose, each person has different tastes but we often buy both variants at the same time. Standard mozzarella is usually a complementary food, while an high-quality bufala might work also as a stand-alone dish.

I know and we prefer the mozzarela di bufala and we use fiordilatte more for warm dishes. When I buy burrata I always take one extra because it so F*** delicious. It is the wow factor and unfortunately american people don't know how the real deal taste. When I see you taste I get the chills of joy because I know how it taste and how delicious it is.

As an Italian from Rome, Bufala is far superior, fior di latte is just bland imho. Burrata is also great but I don't have it often.

Qualche tempo fa, ho seguito con interesse l'intervista fatta a due sposi americani che, in viaggio in Italia, si erano talmente innamorati del gusto della mozzarella di bufala che, una volta tornati in America, iniziarono a produrre mozzarella, utilizzando però latte di bisonte Americano. Purtroppo non riesco a trovare info su di loro. Hai qualche notizia sul loro business? Ammetto che sarei curiosa di assaggiare una mozzarella di bisonte.😊🍴

I eat fresh mozzarella everyday... Yes I have a very limited diet lol tried Bufala For the 1st time yesterday and it tasted quite sour. I'm wondering if I got a bad batch? I was expecting to like it so much I bought 3 packages... Now not so sure! It was supposed to a bufala burrata, However was not very creamy and held its shape throughout. Quite perplexed!

I suggest you go to Naples to taste the fior di latte from Agerola (it's the best) and the "zizzona" from Battipaglia (it's called that way because it looks like a big tit 😆)
La Zizzona Battipagliese è tanta roba, quando vado a Napoli in auto spesso ci passo per comprarne una.
vive in Puglia, nella terra della fior di latte DOP e a pochi km da una città che vive di prodotti caseari (Andria), ma figurati se la migliore non si doveva trovare a Napoli

Di certo un pugliese non dirà mai di venire qui a mangiare la vera bufala. Poi spiegami che significa mozzarella normale. C'è una marea di gente che preferisce la fior di latte alla bufala. Sono gusti. La blogger vive nel mio paese, a due passi da Andria che produce prodotti caseari di tutto rispetto. Un'unghia cosa? Ste classifiche infantili lasciano il tempo che trovano.
@@frangeesk nn sono classifiche infantili, vai in giro per strada e chiedi a gente a caso se preferisce la bufala o la mozzarella normale(non fatta dalle bufale ma dalle mucche), 8 su 10 risponderanno la bufala. E' un dato di fatto che puoi accettare oppure no, ma è la realtà.
