  • Back to practicing my palette knife flower technique! In this video, I wanted to show how to decorate the top of a cake using palette knife flowers! It is much easier to practice this way rather than attempt the side of the cake, and it still looks lovely in the end.

    Italian Meringue Buttercream
    180g large egg whites
    200 g white granulated sugar
    80g water
    450g unsalted butter, room temperature
    1 tsp extract or flavoring
    Gel food coloring, as desired
    Method: Heat the sugar and water to 118C while beginning to whip your egg whites. Stream in the sugar after it has reached 118C into the whites and whip on high until they have cooled from hot to warm and are fluffy. Turn the speed to medium and add in small amounts of butter at a time and finally the flavoring and colors at the end.

And I apologize - I know you asked not leave comments on your video editing but I must say that I very much appreciate how you showed your work from various angles throughout to give the viewer a comprehensive view of how the flowers and leaves take shape.     Just a thought but rather than making a mistake on the cake I'm gonna try making these on parchment paper putting it then in the fridge to harden a bit then placing on the cake.

      You can definitely try! I was recommended by chefs who specialize in this technique not to transfer the flowers, but if it works for you that is great :)

    How long does it take for the frosting to harden?

      Thank you! I’m not really sure what you mean. Buttercream will harden if you put it in the refrigerator, but it will become pliable again at room temperature- it doesn’t permanently harden! If you mean how long will it take to harden inside the refrigerator, it depends on how thick the layer is, but probably 15-30 minutes would be enough for it to firm up!

    Thank you so much for this wonderful video. It is truly the best I have found to show to whole process. I do have a question about how to add flowers to the side of a cake as well. Would you do them directly on the cake like this OR pipe them on parchment paper and then add them after they dry?

      Thank you so much! You could try to put it on parchment paper and transfer it, but everything in the classes I’ve taken/ research I’ve done recommends going directly on the cake!

    Could you do this technique onto parchment and freeze to place on sides of the cake when you’re still learning? I see it being easier to learn for the top of the cake and harder doing this on the sides...

      You could certainly try! I’ve been told by professionals when I took classes that freezing and attaching to the sides doesn’t work well and it is better to practice placing the buttercream on the sides directly, so I have never tried

    Beautiful😍. Does the buttercream easily melt in room temperature? Because it took quiet long time to make the decoration.

      I'm not sure if you have used buttercream before, but it does not melt at room temperature unless your room is very hot--just like anything containing butter.

      Thank you! ♥️ I’m sure you could, though I never have :) the important thing is that it is stiff enough, like an Italian or Swiss meringue buttercream!

    Do you chill the spread buttercream before starting your flowers or you do it without chilling the buttercream on wood?

      No I do not chill the buttercream before starting, but I usually keep my kitchen quite cold, so the temperature of the buttercream is on the cooler side after it is made :) If you work in a warmer kitchen or don't have as much control over the temperature, it might be a good idea to chill it for a few minutes before starting on the flowers!

      I’ve only tried using buttercream, but I’m sure you could try with something else if you wanted to :) I would recommend something that is firm, stable and pliable like buttercream though

      Most people use buttercream and some use a whipped chocolate ganache :)

      I don’t really keep track of which colors or how much of any color I use, I just go by feeling and mix until I am satisfied. Sorry if that is not helpful.

      I think it might be very challenging, but I’ve never tried! The stiffness and durability of buttercream is really important, so if you wanted to use something else that wasn’t buttercream I would try a whipped ganache before I would try a whipped cream

      I used a mixture of red, burgundy, purple and yellow to create it, but I never measure anything so unfortunately I don't have any more detailed answers for you 🙊 I hope that helps a little!

      Well, any pastry or buttercream should be kept cold, and it will be much harder to work with in warm temperatures--as any buttercream decoration would be.
