Похоже, это белково масляный крем. Он хорошо держит форму и можно замораживать. Листики у автора видео замороженные. Просто масляный крем будет расплывсться. Делается белково заварной крем и добавляется взбитое масло. Пропорции могут быть разными. Такой крем используется и для выравнивания торта, с ним легко работать.
When I'm piping buttercream flowers, the buttercream always melts in the piping bag where my hand touches. Does using gloves help to not melt the buttercream?
Sure! Cotton gloves are a must! Room temp is to be between 20-23 (depending on season), and don't fill the bag with too much cream, but use the cream asap~😉

Yes, the leaves attached on the side were frozen in advance, but the flowers on the top side were not..

안녕하세요 :) 쉐푸마스타는 조색 시 색소의 양을 예민하게 조절하기가 쉽지 않더라구요. 쉐푸 오일베이스도 있다고 하던데 그걸 써본건 아니에요~^^; 윌튼이 워낙 익숙하고 색감을 잘 이해하고 있어서 편한것 같아요 :)
