Master The Classics: El Presidente

  • This cocktail has two possible origin stories. The first is that it was created by Eddie Wolke, An American bartender plying his trade at The Jockey Club in Havana, Cuba. Like many Americans Wolke saw opportunity to make some money serving legal drinks to upper class Americans seeking to escape the binds of Prohibition. The drink was said to be named after then Cuban President Gerardo Machado who ruled from 1925 to 1933. The other story according to bartender Jim Meehan was that the recipe was uncovered in a 1915 edition of a book called Manuel de Cantaneros by John B. Escalante. Another detail of note was that for many years people have been following the recipe literally and using Dry Vemrouth and the resulting cocktail was a ho hum cuban 50/50. It was the brilliant cocktail researcher David Wondrich who realized that in Cuba the dry Vermouth was a little sweeter than what we use today, closer to the Chamberey style blanc vermouth. It was when this change was made that the true potential of this cocktail was fully realized. I'd say enjoy this drink, but I'm not gonna because I know you will!

    Old vid, but looked it up because this is a favorite of mine, and I keep seeing reputable barkeeps speccing an entirely different drink than I mix and I thought it was time to have a taste-off. Nice to see yours in the 50/50 camp. I've been basing mine on Simon Difford's spec, which calls for 3 different types of vermouth (presumedly in an attempt to recreate the vermouth of which Mr. Wonderlich speaks), but that seems unnecessarily complicated. I'll definitely enter yours in the ring for the taste-off, which while a pain to execute for drinks with such a wide variety of specs, has a delightfully drunken conclusion.

    I made this drink after it seeing here, and it's a crowd pleaser. The first time I made it (the exact recipe in this video, because it was before I started playing with the specs), one person actually said, "Oh, that's very balanced." {I used the Bacardi version of Havana Club, though, because that's what I have, but I've always been very satisfied with that rum.)

    The use of angostura bitters seems a bit unorthodox, but I can see it adding some really nice complexity. I will try it! Thanks for another great video!

    Just made this with Plantation Grande Anejo after picking up my first bottle of Blanc vermouth. Lovely lovely cocktail, my favourite creation with the Blanc so far. Thanks for the recipe!

    In none of the early recipes does this cocktail call for in aged rum. In the Manual del Cantinero by Escalante, it specifies Ron Bacardí, and it does add a dash of Angostura Bitters. However, in the Manual del Cantinero by León Pujol it does not require a dash of Angostura Bitters, and once again, it just specifies Ron Barcardí, and that could mean aged or light. I've tried it both with light and aged rums, with and without Angostura bitters. I definitely prefer with light rum, though it's not bad with aged rum. I'm definitely ditching the Angostura bitters. I did not like either of them with bitters.

    Thanks, Loved this one! Came right on time too bc I have a bottle of Dolin Blanc that I was losing interest in... Do you have a list of your favorite cocktails that feature Blanc Vermouth? Also, can Blanc be substituted for Cocchi Americano or Lillet at all?

    I can't seem to get that kind of vermouth where I live, do you think that substituting the vermouth for dry vermouth and then adding a smidge of simple syrup to compensate for the sweetness would work?

    When you first uploaded this video, was it a slightly different recipe? Because I remember making it with dry vermouth and more curaçao - and liked it better that way - but now I can’t find the specs. Do you still have them?

    I spotted that cap-on pour spout on your Havana Club, what are your thoughts on them? I've considered picking them up in the past but didn't just because some of my cocktail spirits use corks.

    There seems to be some disagreement over what type of rum to use here - Leandro is in the Aged Rum crowd, but others that I also respect are in the light rum club. Any reason why Leandro favours HC7 vs someone like Wondrich who says HC3? Anyone think a split would be best?

    Great video as always, Mr. Hanky coming out in the last sec caught me off guard though haha. Question: I am building out a home bar and use Cointreau as my orange liquor, assuming I can only have one is that a good way to go or is Curacao more versatile? Thanks!

    Is Lillet Blanc as an aromatized wine, equivalent to blanc vermouth?

      They're common 1:1 substitutes for one another. I hear the Lillet's very similar to blanc vermouth but with more citrus flavour. An article by Nate Teague on Tastylicious includes a suggestion to add a bit of orange bitters if using the vermouth in place of Lillet (Angostura Orange Bitters was the brand specifically mentioned).

    Thanks for another great video. Where I live I cannot get hold of the Chambery Vermouth Blanc by Dolin. What would be the best substitute?

    Hi Leandro, on the rare occasion I see a barspoon measure specified in a recipe, I have been using 1 teaspoon (5 ml). Have I been stuffing this up all this time?

      Answers seem to vary, I'd heard it was 5 ml, too. I've just now found this from the site Advanced Mixology, in an article titled 'What Is A Bar Spoon Equal To? Measurements That Make Or Break Drinks

      'It is important to note that there are different styles of bar spoons. The 5ml measurement refers to an American bar spoon, which is distinguishable by the red cap at the end of the handle. On the other hand, a European bar spoon has a flat end that is used to layer liqueurs and to muddle ingredients. Measurement-wise, it only holds 2.5ml or ⅛ oz. of liquid.'
