- The other week we did a video on Satay peanut sauce, after some of you watched that video you requested that we do a chicken satay video to go with it. So here it is, Chef Pi Tou's amazing satay recipe that changes everything we know about chicken satay!
Here's the recipe:
500g chicken thighs ( ask your butcher to remove the skin and the bones)
1 cup Coriander seeds
1 cup Cumin seeds
Half tsp of turmeric powder
1 Tbsp sugar
Half tsp of salt
2 tsp Curry powder
10g Sliced galangal
20g Sliced lemongrass
5 Tbsp coconut milk
2 Tbsp vegetable oil or olive oil
2 Tbsp palm sugar
Some coconut milk and turmeric for the basting sauce
Skewers
Serve with the peanut sauce
As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.

Recipe is simple but oh soooooo good, was the cameraman speaking Thai? He can speak Thai, but I don't remember him speaking Thai in this video. Thanks for your encouragement, feel we're getting there.
As a female chef, when I saw chef Tou is using galangal and lemongrass that I use daily in my commercial kitchen, I know her recipe of chicken satay wins all others!

Hi, just curious why there is water on the surface of the cooker
Hi Nazim, the water is there to keep the surface cool as the burners are very powerful. The second reason is that it aids in cleaning as oil and bits of food collect in the water rather than sticking to the surface.

Most of those ingridients are exotic to Philippines. Cumin seeds and that other seed. The Galanggang also very exotic. That is more like a rare ornamental plant in Philippines.
I didn't know that, that's interesting that these ingredients are hard to come by in the Phillipines. I don't know much about Phillipino food although I have been known to enjoy a good papa etam.

Fuyohh Auntie Pi Tou, very long story short but I can now speak a little Nepali and was near Thailand in Nepal earlier this year.
So all ill say is liked and subscribed and all the migrants from South East Asia should be thanked for making Britain great.
Food brings the world together, makes me laugh how my Chinese Thai and Nepali friends all love classic British food while I'm moaning about it.
If I get to London anytime soon I'll make a beeline for the restaurant 😂
Very true, how was the food in Nepal? I've never been, is it a mixture of cuisines?
@@FitousThaiKitchen I found it was amazing, it has its own uniqueness wether eating home cooked food or in small local food places.
Some is similar to Indian but with a Nepali twist, some a mix of Chinese/Indian and then the Sherpa and Tibetan is different again.
There’s some really amazing food which you just don’t get exposed to over here as the restaurants cater for the western palate and of course we don’t know what the Nepali dishes are like so tend not to try them. Once you get an idea of how good it all is then your happy to just try anything.
Also the food can be different in different regions as they have their own quirks.
SEA is just an amazing area of the world so rich with diverse food and colour and tradition. 😂👍🇳🇵🇹🇭🇬🇧

Thank you for introducing authentic Indonesian satay from Java, you should try making other variations of satay in Indonesia there are hundreds of versions of this satay just one of them

As previously explained, the mic was left very close to the persons mouth when trying the food.

Hearing him eat was gross and ruined the video for me. I couldn't imagine it in person. Probably just a personal preference, sorry just unbearable.

1 cup of cumin seeds and 1 cup of coriander seeds? That can't be right. Surely just a couple tablespoons of each is plenty.
It was 3 Tbsp of the mixed seeds, it's easier to show us toasting a larger amount for the purposes of the video. You can toast a Tbsp and a half of each rather than needing to keep any excess if you like, thanks for watching.

Although it sound disgusting to foreign ears, it is a custom in some culture. Just like sharing and eating food from the same plate or eating with hand.
believe she identifies tumeric as cumin by accident - if watching she says this is curry then should be tumeric and then coriander and cumin seeds
