Oh my gosh it is, I used to know a woman who make her sauce this way. She would pull out the bones, break up the meat then use it to make her lasagna. Best lasagna ever.
You are sooooo lucky to have her not only a great personality but a great cook! Although my motto is real Italians cant cook anything bad! Love those ribs in sauce I never thought of that. My Italian friend used to make a combination of squashs in red sauce and called it..... (Excuse my spelling) Gagootz it was so so good. Many more great years Noona Pia love to watch you!
I miss never experiencing a grandmother relationship, my girls too live very far from grand parents and they’ll never know this as well. It’s incredibly comforting to have this experience.

To the best of my knowledge 'gagootz' means zucchini but perhaps it means other types of squash as well. Squash in tomato sauce sounds yummy.
