Prime Filet and Jumbo Lumb Crab! Monument Grills Mesa 400 Gas Grill!

  • Great surf and turf on the Mesa 400! 3 small filets and Jumbo Lump Crab meat! Seasoned the filets with PS Seasonings Prime Time Buttery Beef Rub!
    • Started with 3 small filets, 2 ends and one nice small filet.
    • Seasoned with PS Seasonings Prime Time Buttery Beef Rub about 3 hours in advance.
    • Had all of the burners on high for hot and fast.
    • Flipped every 2 minutes and the total time was about 8 minutes.
    • Pulled them off when they hit around 112F and let them rest.
    • They actually carried over to about 130F Degrees, slightly higher than I wanted.
    • Started the side burner on low and melted the butter, added about 1/3 pound of Jumbo Lump Crab meat, sautéed them until slightly brown and pulled it off.
    Summary: Filet is not my favorite, but this meal was really good!

    I need help! I have an outdoor kitchen with gas, charcoal, smoker, and TV. I live in NoDak so this may be my last good outdoor cook weekend. I am a Georgia grad and Ga is playing Kentucky. I cook, drink, watch the game and eat. I have everything in the fridge or freezer - every veg, mushrooms, potatoes, steak, lobster, pork, turkey, chicken, ribs, bacon - everything. What should I cook? I have already made porchetta, pichana, tri-tip, and turkey. Ideas? I'm thinking bacon wrapped shrimp, grilled asparagus and scallops, but I really want a longer cook. Not brisket long or a 3-2-1 set of ribs,

      Tough question! My first thought would be a rib roast or a nice thick steak reverse seared, but those are only about 1 1/2 hours depending on size. I like steak with shrimp and asparagus! I am smoking an Italian venison meatloaf today which I am assuming will take around 2 hours or so, not sure if meatloaf would be an option? When I use beef, I also use bacon as the fat to keep the meatloaf moist. I will have a few grills running today myself, along with the meatloaf, 20 lbs of bacon that I had curing for a week plus, venison sausage and a few types of brats. I like to stock up for future lunches and have been making my own bacon for 7+ years. Not sure if I was any help? Hopefully it will be a good game, but Georgia is pretty good! I didn’t to Penn State, but being from PA always followed them! They are off this weekend! Cheers!
