My inner Bangladeshi dies everytime some foreigner is cooking with a ripe jackfuit. Those aren't for cooking. You must use young/green/unripe jackfruit for cooking.
Just tried this today. When I removed it from the oven after 75 minutes, it dried out and was inedible. I followed every step exactly how it was explained in the video. Maybe my oven is a piece of crap. I'll be trying it again soon as I still have the rest of an entire 15lb jacket to experiment with. I'll try reducing the oven temperature maybe.
I have a ripe jackfruit but really want to make a savory dish like this. Did you notice a difference cooking with a ripe jackfruit? I’m sure it was sweeter but I’m wondering if the taste would be off during cooking
