I have made this so many times now! LOVE IT! I sub Upton's Seitan Italian Crumbles instead of the tempeh. I have a lot of meat-eating guys around who LOVE this and beg me to make it all the time! Thanks for a great and easy recipe!
I don’t know how many times I’ve purchased tempeh and left it in the refrigerator so long I just threw it out unopened. I just checked and I have a package in there now. THIS time I will use it! Thanks Brittany. This looks like a perfect recipe for my “first.”
Just made this and it’s fabulous. I cooked the pasta separately so it doesn’t swell up in the soup and just add it when I heat up a bowl . Thanks for the recipe 🥬🥕🥒
I made this last night. It's a keeper! I made this on the stove top and let it cook for 30 minutes and then added elbow maccaroni for another 10 minutes. I also added a handful of dry tvp when I added the pasta. This was very good and I think it will be a versatile addition to my rotation. In addition to the vegetables in this recipe I also added a bunch of chopped collards. The greens were a delicious addition and really amped up the nutrition. Thank you for sharing a recipe I will go to again and again!

Hello from NYC. I watched this video yesterday and just made the recipe…pretty much exactly as you wrote it. I made it in my 3qt and after it was done I added about a cup (maybe more) of very hot water, as it wasn’t really soup but very chunky. Such a perfect recipe and I’m so grateful you shared this. Thank you
To Hess - how was the flavor with the tempeh in there. That is one thing I don't buy or use. Not sure I'd like the taste. It so strange-looking in the package, I've just always stayed away from it. And did you cut your tempeh into pieces or did you crumble it. Again, I don't really know what I'm asking here, since I don't even know what the texture of tempeh is like. LOL
@@kefirheals7383 Good question. I haven’t bought tempeh before but watch others use it. It was pretty easy to crumble up and absorbed the flavors of the soup. I think it’s great….kinda like a ground beef in a soup. I opened its container and it didn’t crumble easily until I broke off pieces and crumbled those between my fingers. It just took a few minutes. I would absolutely use it again. No weird or bitter taste. I got the original flavor one from Lightlife. Got mine at Whole Foods but I think it’s very popular and easily found in a decent grocery store. Give it a try : ) I think you’ll like it in this recipe.

Substituting crushed tomatoes for some of the broth is great too. You can actually make it on a stove top with just tomato sauce and crushed tomatoes with no broth and it comes out great too.
This looks really good. I think I may chop up some soy curls and use them in this. I love soups and a salad together. Also it lasts for several dinners and saves me from having to cook each night.
Hi Brit. I’ve just discovered your channel and your story is inspiring. I’ve got to ask though, as I go through my journey being vegan and plant based, I ask myself about what is my motivation. You said before that weight loss was never a motivator for you. What you were after was better health. I assume that the weight loss just followed. I’m wondering to myself if I should even care too much about the weight loss, because so far, by avoiding oils and any ‘non-whole’ foods, I’ve being losing about a pound every 3 or 4 days. So, should I care if tofu has more ‘fat’ than beans? I’ve been avoiding tofu, but I’m frankly running out of variety. I want to make this way of eating stick, and I’m afraid of risking giving up due to the avoidance of “fats” such as avocado and tofu.

Nice recipe, but pasta fagioli is naturaly vegan. It doesn’t need any meat replacement.
