  • This dulce de leche cake (golden key cake) is super soft and moist, the buttercream is rich with extra caramel flavor, in between a tiny touch of hazelnuts. This cake is also called “golden key” as a gesture to a famous Russian caramel candy named “golden key” (золотий ключик). If you’re a caramel lover, you’re going to love this dulce de leche cake. This caramel cake is one of the best desserts I’ve ever made.

    Ingredients:
    For the cake:
    2 cups (250g) Flour
    2 teaspoons Baking powder
    1 teaspoon Baking soda
    1 cup (200g) Sugar
    10oz (280g) dulce de leche
    4 large Eggs
    1/2 teaspoon Salt
    1¼ cups (285) Sour cream
    For the syrup:
    1/4 cup (60ml) water
    1/4 cup (60ml) milk
    1 teaspoon instant coffee
    1/4 cup (50g) sugar
    1 tablespoon liquor/Rum *optional
    For the cream:
    12oz (340g) dulce de leche
    1 cup (230g) Butter, softened
    1 cup (240ml) Heavy cream, cold
    1 cup (225g) Cream cheese
    40g Hazelnuts, crushed
    Directions:
    1. Make the cake: Preheat oven to 350F (175C). Line three 8-inch round cake pans with parchment and, grease with butter and dust either flour. set aside.
    2. In a large bowl whisk eggs and sugar, until doubled in volume, about 5-6 minutes. in a separate bowl stir sour cream with baking soda, then add to the egg mixture and beat until incorporated. add dulce de leche and beat until incorporated.
    3. Sift flour, baking powder and salt. Stir until incorporated. Do not overmix.
    4. Divide the butter between the pans. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let cool for 5-10 minutes, release from the pan and let cool completely. then, cut the tops of the cakes. Cut into small cubes and bake at 400F (200C) for 10 minutes, until golden brown. Set aside for later.
    5. Make the syrup: in a small saucepan heat water, milk, sugar, coffee and liquor. Bring to a simmer until the sugar is dissolved, set aside.
    6. Make the cream: in a large bowl beat butter until cream cheese until smooth. Add dulce de leche and beat until incorporated and smooth. In a separate bowl neat heavy cream to medium peaks. Fold the whipped cream into the butter mixture. Transfer to a piping bag (optional).
    7. Assembly: place first cake layer (cut side up) in the middle of the platter, soak with the syrup. Spread/pipe a layer of the cream, sprinkle 1-2 tablespoons of crushed hazelnuts. Repeat: place the second layer of cake, soak with syrup, spread another layer of cream, sprinkle hazelnuts. Place third layer of cake (cut side down), soak with syrup. Spread the remaining cream over top and the sides of cake.
    8. Place baked leftover cake pieces in a food processor and process into small crumbs. Decorate the cake with the crumbs.
    9. Refrigerate for at least 3 hours before serving.
    Notes:
    • If you don’t have access to dulce de leche in your county you can easly make it by yourself: place a can of sweetened condensed milk a pot of boiling water, making sure the whole can cover with water all the time, boil for 2 hours, then let cool.
    • If you want extra caramel flavor, you can replace the sugar in the syrup with 50 grams dulce de leche.

    Hai...can the sour cream in this recipe be replaced with buttermilk or something else??..also may I please know the baking time if using 7-inch baking pans?...And can salt be added to the frosting to have a salted caramel-like taste?..if yes,,how many teaspoons of salt is to be added?..

      Yes you can use butter milk instead of sour cream...but butter milk is a little thinner than sour cream so add a little less of it. And about the cream, add about a pinch of salt to the *dulce de leche* and taste it. If the taste is of your liking then add all the other ingredients to it to make it into the frosting (don't add the salt directly to the frosting as it might make it too salty and potentially ruin it)

    Caramel is not the same as Dulce de Leche. I love your recipes but being born in Uruguay I have the need to clarify it. They have different processes in the making and they also have different ingredients.

      It looks like she used canned dulce de leche which is basically store bought condensed milk boiled in the can. I know that Nestle makes it.

      Its a lot like caramel, but its made from sweetened milk that’s been heated long enough for a caramelizing to occur. The texture is thicker and the flavor is richer and milkier. You can make it at home yourself by boiling cans of sweetened condensed milk for about 2-3 hours. I usually do 3 hrs because I like it to be more caramelized and thicker, but it's all up to preference :)
