  • Cotton Soft Dulce de Leche Cake - This is literally my first time trying out making dulce de leche caramel sauce. It’s pretty amazing where you’ll just need to boil the can over long hours and it will become a thick and soft caramel sauce. I personally feel a soft cotton light sponge cake goes really well with dulce de leche as the sauce itself can be something heavy and filling. The cream cheese buttercream frosting is so delicious with the dulce de leche sauce. I hope you’ll be inspired to try out making this cake. Please comment below what you think about this cake.

    Ingredients:
    • Dulce de Leche
    500g [1 large can] sweetened condensed milk, sealed can
    • Dulce de Leche Sponge Cake
    7x7 inch pan
    4 egg yolks
    20g [1½ tbsp] fine sugar
    48g [3½ tbsp] oil
    40g [1½ tbsp] dulce de leche
    15ml [1 tbsp] milk
    1 tsp vanilla extract
    ¼ tsp salt
    72g [½ cup + 2 tbsp] cake flour
    4 egg whites
    ½ tsp cream of tartar
    50g [¼ cup] fine sugar
    • Dulce de Leche Cream Cheese Frosting
    340g [1½ cup] unsalted butter, just lightly softened
    400g [1¾ cup] cream cheese, room temp
    150g [½ cup] dulce de leche
    syrup [1 tbsp sugar + 2 tbsp hot water]
    dulce de leche for top deco
    Piping tip: 1E
    Instructions:
    • Dulce de Leche
    1. Make sure your can of condensed milk is sealed tight (not opened) and not dented.
    2. Remove the paper label wrapper.
    3. Use a large deep pot.
    4. Place the can in the middle of the pot. Tilt the can horizontal position so that I have at least 2-3 inches above the can. If you pot is tall enough, you don’t have to tilt the can horizontal like the way I did.
    5. Fill the pot with water, and make sure the water level is at least 2 inches above the can.
    6. Bring the water to a boil. Then lower the heat to medium low and simmer for at least 3 hours. You don’t have to cover the pot as you can check the water level from time to time. You can cover with a lid if you wish. The longer you simmer, the thicker the consistency and the darker the sauce will be.
    Remark: If you wish to speed up the simmering time, you can use a pressure cooker and cook for only 45 minutes.
    I’ve done a comparison simmering it for 3 hours vs 4 hours. (see the outcome in the video)
    7. When time is up, off the heat completely and leave the can in the hot water all the way until it is completely cool.
    ALERT! DO NOT open the can when it is still hot, the sauce can splatter out, so be very careful.
    8. Once the can is completely cool (I waited at least 2 hours), remove from the water.
    9. Make sure the can is completely cool before opening it.
    10. Here you can see a soft and smooth caramel sauce.
    • Dulce de Leche Sponge Cake
    1. Preheat oven 160°C/320°F.
    2. Separate the eggs.
    3. In the yolk bowl, add sugar. Mix vigorously until well combined.
    4. Add in the oil, dulce de leche, milk, vanilla extract and salt. Mix in between each of the ingredients until well combined.
    5. Sift in the flour. Whisk in a circular motion until combined, do not over mix. Set aside.
    6. In the bowl of egg whites, add cream of tartar. With an electric mixer, mix on low speed until frothy. Add sugar in 3 batches. Continue mixing on high speed until stiff peaks formed.
    7. Add the egg whites into the yolk batter in 3 batches. Fold in a circular motion until the white disappear, do not over mix. Switch to a spatula and continue folding until combined, do not over mix.
    8. Transfer batter into a 7x7x3-inch pan, greased and lined with parchment paper. Use you spatula to stir and wiggle the batter to release air trapped bubbles.
    9. Bake in preheated oven at 160°C/320°F for 50 minutes or until an inserted skewer comes out clean.
    10. Remove the cake from the pans, cool them completely before slicing.
    11. Once the cake is cooled. Slice the cake into 4 sheets, with the brown edges trimmed. Set aside.
    • Dulce de Leche Cream Cheese Frosting
    1. In a large mixing bowl of butter (just lightly softened), mix on high speed until creamy, fluffy and pale.
    2. In another large mixing bowl of cream cheese, mix on medium speed to soften and break all the lumps, do not over mix.
    3. Transfer all the cream cheese into the butter. Mix until combined.
    4. Add in dulce de leche, mix on low speed until combined.

    0:50 that's how my Abuelita makes it! We call it Arequipe (pronounced: ara keep eh) in Colombia it's traditionally eaten with Obleas a super thin waffle cone like wafer the size of a crepe my Abuelito brings them back from Colombia sometimes I'm sure it will taste lovely in cake thank you for the recipe I'm going to make for a family reunion tomorrow!

      Hi Valentina. Unfortunately I have not seen any dulce de leche from the store. We only have the regular caramel. Hense I can't compare the taste. However, I love how the color and smoothness of the caramel turned out after the long hour of simmer. If you have a pressure cooker, boiling it for 45 min will be sufficient, cut down lots of waiting time. Thanks for being here ❤️🥰

      The sweetness is just nice for me. Caramel is sweet to begin with, and it goes well with this sponge cake, because the cake itself is not too sweet. You noticed I added just a tbsp of dulce de leche and reduced the amount of sugar as well. So overall it's just nice with the layers of dulce and cream cheese frosting (no sugar, only dulce)

    Nice Fiona! I have a can or 2 of Dulce de Leche already which will be a timesaver for me. I've always wanted to make it using sweetened condensed milk though but I've been a tad nervous to do it (afraid it might explode on me, lol). I would love to make this but I can't use cream cheese. My go to frosting is SMBC. How much SMBC frosting would be needed to fill and frost this cake? I love it when cakes have a filling and are also filled with a frosting. Double the Yum factor, lol... 😋

      Yes you can dear. The baking time will be shorter approximately 35-40min or until the skewer comes out clean

    Hello there! I would love to try this recipe but my oven doesn't go below 180°C, is there any way I can do the sponge cake at this temperature?

      You can give it a try. The baking time will be shorter. check your cake the last 15 min, make sure inserted skewer comes out clean. Place your baking pan on the lowest rack possible so that the top part of the cake will not be burnt.

    Ur recipes r grt. When I keep my decorated cake with whipped cream, my cake cream dries out ..even though I cover the cake with plastic box. Can u pls help

      You use whipped cream? For the cream to cover the cake, try not to mix for too long, the longer you mixed the more tight the cream become, hense it will not be so smooth and it will probably dry to faster and crack in some cases. Mix and stop mixing as soon as you feel the cream reaches stiff. Lift up your mixer paddle if the cream held on within the paddle and not drop, it's good to go.
      Alternatively you can try this frosting shown in this video using cream cheese and butter, it's super stable and will not dry up, very forgiving frosting

    Hey Fiona this cake has gained so much love that my family has asked me to make it again , it was finished in just a day , I would love to know if I can make it into a swiss roll cake , the baking time wud b 170 deg for 25 mins I guess

      Yes absolutely for Swiss roll. This cotton soft sponge is the easiest cake to roll. And yes you're absolutely right about the baking time and temp. Way to go, dear ! 👍🏼

    is there any way this cake can be stacked with fondant covering it? I've been asked to make on but don't think it will be sturdy enough to hold up to the weight.

      I'm afraid the dulce de leche will not be stable enough for the fondant. However, you can make a dulce de leche buttercream only instead. (Meaning without dulce de leche sauce as the fillings) That way you can 😊

    How many cans of condensed milk did you use for the whole cake and the amout of cream that you whipped was it enough for the whole cake or did you make any extra cream . Wanted to make it

      I had to use 1 large can of 500g to make dulce de leche, since that's the standard size of a can. I have used half the can for the whole cake. You can store the remaining dulce de leche in the fridge in air right container, for at one to two weeks. Alternatively, you can get a smaller can if you have

      Hi Tammie, I apologize for the late reply. You can use a 2 egg white ratio for the SMBC for this cake. You may follow the exact measurements of my IMBC which I made last week, ua-cam.com/video/BVHtxCxhpFI/v-deo.html
      Omit the cream of tartar, you don't need it for SMBC 😉

I have 2 cans of Dulce de Leche (thankfully I'm able to find it in store where I live) but I want to make it the way you did so it'll have a deeper flavor/color. Can't wait to make this.       Hi. Cake flour has no rising agent. What you're referring to that has rising agent is self raising flour. Yes you can use plain flour instead, but if you would like the cake to have a softer texture, you might want to consider cake flour or homemade your own cake flour with very simple step, here is the video ua-cam.com/video/B9K5OVWZ1X4/v-deo.html
