    So I have a lamb curry and it’s bloody spice do you have any advice on how to stop the spiceness

    • @JudiintheKitchen
      @JudiintheKitchen  3 роки тому +2

      Hi! There are some basic ideas that may help. It will be up to you on which one would work best for your dish. Sugar can help counteract spiciness, so that may help. Or you could add more of your liquid ingredients to dilute the spice. Add a little at a time, taste, then go from there. You MIGHT need to add some flavoring to balance things out, depending on how much fluid ingredients you add, so going a little at a time will help avoid much of that. Added fat may also help to cut some of the spiciness. Or you could add all three...more liquid, fat and sugar. Thanks for watching and asking! I hope this helps :)

    I managed to save my pumpkin soup by adding some more stock and a large handful of red lentils as I had used up all the pumpkin I had. What about if you wanted to add more *s p i c e* instead, how would you do that?

    • @JudiintheKitchen
      @JudiintheKitchen  3 роки тому

      Hi! That's a good question. The answer depends on what you're dealing with....and because of that, there are many variables. If it's a cooked dish, like a stir-fry or soup, simply add more of whatever spice you need to get the flavor you want. If it's a baked item, like a spice cake or quick bread, there's no way to add more spice to the baked item itself. However, you could top it with something with the spice needed to adjust the flavor...like a sauce, sprinkling, or topping of some sort. I hope this helps! Thanks for watching and asking :)

    How can I cool down Chili con carne, I accidentally put too much chili powder in

    • @JudiintheKitchen
      @JudiintheKitchen  2 роки тому +1

      Hi Rowena! I think you have a couple choices on this one. You could add more of the sauce mix minus chili powder...like more tomatoes, beans, meat, and such. And/or you could try this...it may seem odd, but you could add a LITTLE bit of sugar to counteract the spiciness. Personally, I would just go with increasing the ingredients minus the chili powder. Yes, you'll have more chili, but it will be to your liking. If adding sugar, add just a little at a time, stir it in and allow it to cook a couple minutes, then taste. Go from there. I hope this helps! Thanks for watching :)

Yeah I put 2 portions of Carolina Reaper into the crock pot!🤦‍♂ DOH!!! Normally I am more careful. But I had a label snafu. Left the Chili cooking over night last night and thought it was wrecked when I taste tested it in the morning.... I found your vid. and took out 1/2 the sauce to freeze back again. Added a littile store bought pasta sauce and some butter. ALMOST right... Not quite. So I dumped in a 1/3 a bottle of Crown Royal and a TSP of mesquite liquid smoke. It isn't right but it's DAMN CLOSE!! I figure on adding 2 cups of white rice and half a cup of wild in a few hrs along with the sweet and zesty famous Dave,s BBQ added to ground beef I just made. And maybe with a little cream I can make some odd ball Spanish rice looking dish that tastes like a smoky BBQ beef Curry. May cool it off and ad some half n half too.

    • @JudiintheKitchen
      @JudiintheKitchen  3 роки тому

      Hi Erik! I have not made pozole, so you'll need to be the final judge on what to add to make it right. You could add a potato or two. The added starch can help to cut the spice. Possibly add a little nut butter to counterbalance the spiciness...a little cashew butter or tahini may help. Or a TAD bit of sweetness, a little sugar may help to counteract the spices. In Thai cuisine, they add a little acid, like vinegar to counteract spiciness. So, there are several options you could try. You'll have to decide which would work best in your dish. Thanks for watching and commenting! I hope this helps :)

      @@kxng16 Eek! This is a real problem! Can you remove some of the broth and replace it with more broth and no spices? It sounds like it would take a LOT of adjustment to counter soooo much pepper. Milk is known to tame pepper and spiciness. Removing some of the broth and replacing it with milk may help. A little sweetener may help some.

    • @JudiintheKitchen
      @JudiintheKitchen  3 роки тому +1

      Hi! That's an interesting question! How about making some type of sauce to serve with them...one that is milk-based and certainly NOT spicy. Milk tames heat in the mouth, so a milk-based sauce (or plain cheese type of sauce) will help. Again...one without spice in it. When served together, the flavors should help to balance each other out. I hope this helps!! Thanks for watching and asking :)
