    In this video I showed you the basics that go into making onion pakoras. If you master these basic steps then you will soon be making the best onion bhajis. Onion bhaji is also called as onion pakora/peyaji in Bengali, peyaj being onion in Bengali. It is served as a snack in India with a cup of tea to go with it but it can also be served as an appetizer with the main meal. I frequently have it as a side with dal and rice.
    Ingredients required for making onion bhaji -
    * 1 large and 1 medium onion. (can use red/yellow/white onions)
    * 1/2 teaspoon nigella seeds (kalonji/kalojeere in Bengali). You can also use cumin seeds instead. Sometimes even carom seeds (ajwaiin) are used. Carom seeds have thymol in it so you can substitute it with dried thyme because thyme also has thymol, so it goes very close to carom seeds in terms of flavor.
    * can even add a half a teaspoon of grated ginger and half a teaspoon of grated garlic
    * 1 to 2 tablespoons finely chopped coriander leaves (optional). Can even add parsley.
    * 1 to 2 finely chopped green chillies (optional)
    * 1 teaspoon salt
    * half teaspoon kashmiri red chilli powder (optional). Can add any chilli powder or paprika
    * 2 tablespoons rice flour
    * 1/4 th teaspoon baking soda
    * 5 tablespoons gram flour (besan). Please do not stick to this proportion. You may need more or less depending on the amount of water released by the onions. Add a tablespoon at a time and work up to a sticky mass.
    * oil for deep frying
    These taste best as soon as they are made and will start losing their crispiness with time, but if you made it little early you can also put them in a 375 F oven for 10 mins before serving You can serve it with green chutney/ketchup/have it as is.

    This is a good recipe and I make it regularly. I like to batch cook as I live on my own, so a good tip is to under cook (just starting to colour) any your not going to eat at once. These can be kept in the fridge for a few days or frozen and then quickly fried when needed (defrost first if frozen).

She is also the only youtuber i have seen after all my research on this dish who actually gives you an oil temperature for frying , this takes out the guess work finally .       Oh Bumbi, you are an absolute star! For all the little explanations about how thinly to slice the onions, how much besan flour to use, how to fry immediately, what temperature the oils should be and how to test it, etc. etc. etc. I THANK YOU ❤
      All these small reasons why you do things are sooooo helpful, and once I hear the reason, it seems so obvious to me! I love pakoras, and have never managed to get them quite right, but armed with this info, I may do better in future. I just wanted to dive into UA-cam and much on some of them with you!!!

    I am addicted to your videos Bumbi, you make everything seem so easy. We used to call them pyajoos in Calcutta and were great street food. Here in London although available they are bulky, soggy and just horrible. You have inspired me to have a go. Thanks for posting.

    I watched a guest on a program with Madhur Jaffrey who made pakoras very similar to you. I've tried it and it really works. Far better than making a batter and adding onions, etc. and more authentic than something made for British restaurants.

    I confess sometimes I make a big plate of these and it’s dinner for our movie night 😂😂
    I agree using the strainer is the best route as putting them on paper towels to drain seems to make them soggy. Thank you for showing such details! Your way of presenting is why your recipes always turn out so well 💕💕💕

    It's very easy to fry onion 🌰 bhajiya while mixing all ingredients we should not add water 💧 because onion will release its water 💧 to get crispy onion bhajiya we should not add water
