Cornbeef Hash: 1 tin cornbeef , 2 carrots sliced, 1 large onion finely diced, 2 potatoes diced, 1 beef oxo cube. 2 - 3 teaspoons bistro gravy granules. 1 - 1 1/2 pints water. Method: add onions, carrots, potatoes and most of water to pan, boil gently until all veg are soft. Add oxo cube and can of cornbeef. Gently simmer do no over stir. Then add gravy granules and more water if required as there should be a thick ish gravy. You decide how much water you prefer. To bulk out, this recipe 2 good quality sausage could be added for extra flavour browned in pan first before starting veg. Then just slice sausage and start the recipe.
Hope you try and enjoy, good source of iron from cornbeef. ❤️

I love seeing the English countryside and all of those quaint little towns. When we were camping we would make “omlettes” in plastic zipper bags. You have to use a larger size because the bag is thicker. We would crack a couple of eggs into the bag and mush it all up. Then we would add our fillings of choice like maybe onions, cheese, mushrooms, ham, etc. Then you place the bottom of the bag with the egg mixture into a pot of boiling water until the egg is cooked. You can eat out of the bag. Only dishes to clean is the silverware and you already have hot water from the pit the eggs were cooked in 👍🏼

We Dutch have similar weather and a similar love of complaining about it 😂 When it rains my husband let's me know about 50 times a day how miserable the day is. But in summer he complains it's too hot! My go to one pot meal: chop garlic (lots) and 1 yellow onion, sauté with lots of olive oil, chuck in 500 gr of washed risotto rice, add chopped courgette (we do 3) and ham cubes(250gr?), add boiled/hot water until covered. Keep at a soft boil and stir now and then until water is almost gone, add more water if risotto needs it, when done add lots and lots of (goat) cheese, mix well and enjoy. It looks like mush but tastes great!

You two are so much fun! And it's so nice to hear British English. I am Belgian, but my late dad was from Oxford, married my Belgian mom and lived here in Belgium for most of his life. I was thus raised bilingually (Dutch/English), so proper (British) English will always be my favourite 😊
Mind you, I have also lived 7 years at the Arctic Circle in Finland (Rovaniemi) and 7 years in Odessa, Ukraine. The stupid war forced me to come back to my home country Belgium. Not regretting it though, I have certainly found a second love for Belgium again ❤
As for one pot recipes, one thing I always loved was a mix of all kinds of stuff:
Boil chopped up chicken breasts with some bouillon cubes, and add some pasta (I love the spirellis). Add some diced up potatoes as well. After a bit, you can add whatever else you like. I used to add onion, garlic, mushrooms, carrots, peas. Spice it up with some curry. When it's all tender, add cream and/or flour to make the liquid thicker. And enjoy! I loved this during Winter time 😊😋

I make this when I don't want to make a mess in the kitchen but I want a complete meal. I sauté yellow onion in olive oil, garlic, salt, and pepper, until golden and then add boneless, skinless chicken breast. I add a cup of white wine and once this is cooked off, I then add spinach, sundried tomatoes, cooked rice (I use the pre-cooked stuff as well), cream, and parmesan reggiano cheese. Add a bit more salt and pepper. I cook this down until it thickens a bit and there you go, you've got a meal. Takes 30 minutes max.

  • @costasworldofmusicmemories5792

They say : "You can never go home again ". In your case Alec and Emma, it's the van. It gave you an opportunity to reconnect with family and familiar terrain. It's not always about the weather.
You asked if we had any suggestions for one pot dinner recipes. The simplest is stir fry anything you have available and add some of your favorite oil and spices. Well done Alec for the
wonderful meal you made. Harriet and I never miss a video. Sending much love 🙏❤🙏 Harriet, Jim and Yuki. Richmond, Va.

my current favorite (very simple, but very delicious & affordable) one pot meal:
sauté chopped onion + chopped poblano pepper in a little coconut oil. Add garlic powder + ginger powder. Then add the flavor pack from one package of ramen (my favorite is soy sauce flavor.) Add chopped bell pepper + chopped tomato. Next, add the noodles from the package of ramen and water - not completely covering the ramen, just covering it about half way. Cook with the lid on over medium heat. Stir the noodles around after a couple minutes so both sides get submerged in water (they come apart easily after cooking for a little bit.) Next, add two slices of swiss cheese (I use dairy-free cheese, but I’m sure regular swiss cheese or any cheese you have on hand would be great.) Finally, stir in some garlic chili sauce and serve sprinkled with chopped green onions - seriously so easy and creamy and packs so much flavor!

When we were doing keto I would use cauliflower rice and heavy cream instead of soup. I hope you like it. It was supposed to be put in a pan and top with cheese and in the oven. As I got older and lazier, I just threw the cheese in at the end and called it a day... 😆 I hope you enjoy it.

Your mushroom stroganoff looked delicious. A dish that I find fairly quick and easy to prepare and cook is bacon tagliatelle. It needs two pans though to cook the pasta separately to the rest but it only takes about 15 minutes to cook and ten minutes to prepare the ingredients
4 slices of bacon sliced and diced , frozen bacon is easier to cut as it’s not slimy. A couple of teaspoons of green pesto , a clove of garlic chopped, half a yellow or red pepper sliced into small pieces. A couple of sliced mushrooms. Half a pot of crème Fraiche, and some grated Parmesan cheese to stir into the sauce. Fry the bacon off with chopped garlic then add the mushrooms and peppers and cook until soft. Stir in a couple of teaspoons of green pesto and cook through until the pesto is cooked into the ingredients. In a separate pan boil 4 bundles of tagliatelle for around 12 minutes with a pinch of salt to season. A few minutes before the pasta is ready boil some frozen garden peas in the same pot as the tagliatelle or cook in the pan with the bacon and other ingredients. Carefully stir in half a pot of crème fraiche but don’t let it get really hot or it will split. Add the cooked pasta and stir to cover it with sauce and serve. Also add some grated Parmesan to the sauce and stir in to melt. Quick and tasty food and cheap to make

Another awesome video. You three are so much fun! Here ya go.... A few one pot/skillet meals.
    Sweet Potato Hash:
In a large skillet, saute some diced or chopped sweet potato in olive oil until nearly but not quite fork tender. Then add some chopped onion , garlic, and zuchini and continue to saute with sweet potato until done and nearly caramelized. Add salt, pepper, and cumin then add some ground chorizo sausage or whatever sausage you've got and sear it off good. Push everything to one side of the skillet , lop in a little butter and crack a few eggs into the pan to fry. Mix it all up, toss in some cheese if you like and a splash of Cholula Hot Sauce. Smashing!
    Ribollita (Peasant Stew):
Chop a couple carrot, an onion and a couple stalks of celery and toss in a pan with some olive oil to saute until translucent. Toss in a can of crushed tomatoes, a can of drained cannellini beans, some chicken broth or stock, a small wedge of parmesan, pepper, dried basil and oregano. Add some torn kale and crusty bread. Delish and so comforting!
    Posh Beans on Toast:
To a pan add olive oil and butter, then add some broad beans or lima beans, peas, pearl onions, a little chopped garlic, a squeeze of lemon, some chopped parsley and green onion for flavor and color. Spoon onto a slice of crusty bread and crumble some feta over the beans.
For Alex: Slap another piece of crusty bread on top and you've got a post beans on toast sandwich! lol
Enjoy and as always, safe travels Beans!

I really love Clovelly, the sleighs are for the residents to fetch their shopping and transport things up and down as cars aren't allowed. Apparently they used to be pulled by donkeys but that's no longer the case. (By the way I believe it's pronounced Clo Velly not Clover lee lol). Keep up the good work, so many great adventures to come and, soon, a lovely new bean to join in with them 🥰

"hamburger soup": brown some ground meat and onion, add broth (chicken, veggie, etc), add a bag of frozen veggies, whatever herbs you want (I usually use thyme and bay leaf...I'd add thyme to just about anything if I were allowed), add a can of diced tomatoes...let simmer til veggies are the consistency you want).

Really enjoy your content, you two are just lovely together , and yep too much dreary weather wears on the body and mind and spirit- I have to actively cultivate joy by literally imagining the feeling of joy! (complaining doesn't do it for this American) however, Alex if you make this dish for Emma, I predict you BOTH will be experiencing a lot of joy!!! 😉😂
Brazilian cod (fish) Stew Recipe - 🌸1 1/2 to 2 lbs of fillets of firm white fish such as halibut, swordfish, or cod, rinsed in cold water, pin bones removed, cut into large portions- I have also used salmon
    🌸3 cloves garlic, minced
🌸4 Tbsp lime or lemon juice (used to soak fish in before cooking but also a total must during serving!)
🌸Salt & Freshly ground black pepper
    🌸Olive oil
🌸1 cup chopped spring onion with the greens, or 1 medium yellow onion, chopped or sliced
🌸1/2 yellow and 1/2 red bell pepper, seeded, de-stemmed, chopped (or sliced)
🌸2 cups chopped (or sliced) tomatoes
    🌸1 Tbsp paprika (Hungarian sweet)
    🌸Pinch red pepper flakes
🌸1 large bunch of cilantro, chopped with some set aside for garnish
🌸1 14-ounce can full fat coconut milk directions:
In a large covered pan (such as a Dutch oven), coat the bottom with about 2 Tbsp of olive oil and heat on medium heat. Add the chopped onion and cook a few minutes, Add the bell pepper, paprika, and red pepper flakes. Sprinkle generously with salt and pepper. Stir in the chopped tomatoes and onion greens. Bring to a simmer and cook for 5 minutes, uncovered. Stir in the chopped cilantro. Lay the fish pieces on the vegetables, Pour coconut milk over the fish and vegetables. Bring soup to a simmer, reduce the heat, cover, and let simmer for 15 minutes. add more salt (likely), lime or lemon juice, paprika, pepper, or chili flakes to get the soup to the desired seasoning for your taste.
Garnish with cilantro. Serve with rice or with crusty bread, or since I am low carb I add in riced cauliflower, which can be added with the onions and peppers-
this is a very tasty dish that is super nutrient dense & I never tire of the taste😋

One Pot Chicken Orzo - chicken thighs with skin and bones (trim fat), salt/pepper, brown in butter until skin is good and brown. Take it out. In same pan, sautee portabello mushrooms sliced (or any mushroom), spinach and a bag of orzo. Fill up with Chicken broth or water or combo (chicken broth will be more flavorful). Put chicken back in skin up cover and cook until chicken is done.
One pot Ground Italian Sausage (or Ground Turkey or Chicken) - sautee shallots/minced garlic until translucent. Then ground sausage/turkey/chicken whatever you prefer.... season with S/P and Italian seasoning... once it's no longer pink - add orecchiette (ear pasta cuz of the shape) by feeling amount.. then add chicken broth... cover and cook until pasta is done to desire. Add arugula (rockets) at the end. Grate parma cheese to finish.
two of my go to recipes on our travels when we roadtrip. Enjoy! ~Lissa

Right Alex, as you asked I have a meal that is easy to prepare, easy to cook and maybe not so easy on Emma's internals and it is this : Buy a Turnip (Neep) , skin it and cut into smallish chunks and boil in salted water for about an hour till soft. But that is not the meal side of it, as you need 2 bowls or Pyrex deep dishes and into them large spoon 3 spoonful's of Rough Oatmeal.
Add salt and black Pepper for taste, give it a swish round and ladle off as much of the turnip bree as you want. The more you have, the better the meal is. Stirring continuously so there are limited lumps , when the bree turns cloudy, spoon into your gobs and feel the heat internally slide down to your gullets. And that is it 2 satisfied well fed adults and the Neeps can be used for another meal the next night with dare I say sausages and mash or an alternative !!

One pot meals?? Ramen is the ultimate! Buy a good quality ramen like Shin Ramen and then you can supplement with any leftover veggies, proteins and eggs cooked right into the broth. ANYTHING goes with ramen. You can't beat it for convenience, transport and preparation. The possibilities are endless.
Oh and if you're worried about sodium content, just add more veggies into the mix and less of the seasoning packet. Taste as you go. It is so yummy and versatile.
It never ceases to amaze me that a woman's body is capable of producing and carrying another life. Women were born to sacrifice and nurture. Emma, you are amazing!!!!
    Stay safe!!!!!

The Pacific Northwest of America is similar to England in the winter. We love it because it means we've arrived at the season for soup, reading books, and enjoying hot drinks. I highly recommend making ratatouille. Saute in a few spoonfuls of olive oil the following cut up veg: small onion, three cloves of garlic, sweet pepper, a peeled eggplant, one or two small zucchini, and three tomatoes. Add salt, pepper, torn up basil (or any herbs you like). Once the veg are well cooked and stewy, top with a salty cheese such as feta. Serve with bread. The leftovers are delicious eaten cold with crackers or spread on top of bread.

Beef stew is always a good one pot meal.
Mac n Cheese (but you can add veg to it)
If you have a sauté pan you could always do a stir fry. You could probably do this in a pot. I’ve just never tried that method.
    I like making cashew chicken:
diced up boneless chicken thigh / breast
    Thinly sliced carrots
Onion (white) - cut into bite size chunks
Celery cut into 1/2 inch pieces (I also use the leaves)
Minced garlic (2 cloves and of course use more / less depending on how garlicky you like stuff)
Green bell pepper, cut into bite size chunks
Sauté the veg in some neutral oil (like canola). Toss in the chicken. Add some soy sauce and black pepper. If you want heat, throw in a little diced red chili OR shake in some crushed red pepper.
Make a corn starch slurry…a little warm water mixed with a spoonful (or two) of cornstarch. It’ll help thicken the juices in the pot / pan.
When everything is nearly done, toss in some crushed cashews. I usually get the whole cashews with pieces and put them in a zip bag…then lightly tap with the full end of a knife. Can leave some whole if like.
Lastly, taste it and adjust seasoning as needed.

You should walk to Baggy point in that part of the coast.
I absolutely love camping in the rain, researching or reading fiction with the rain pattering on canvas, steel or fibreglass. It’s so relaxing, the same walking with a good umbrella. I don’t like hot sticky days too hot to do anything.
Fajitas can be great to make in one pot, take jars of soured cream guacamole and salsa either home made or shop bought. Place plates instead of pan lids and heat the wraps between them, one up one down. Just need peppers, onions and whatever else you want to make vegetable or meat derived versions. Take pre mixed spices.

Also if you want to buy a house there you have to go through an interview with the land owner and you can’t use them as holiday homes either xx
