- If you love peaches, like I do, then you HAVE to make this pie! There's a flavor twist in the recipe - GINGER! It's tangly flavor works so great with Peaches and the Crumble will have you wanting to use it on other desserts.

Pie Dough Double Crust
2 ½ cups all-purpose flour (375g)
1 tbsp sugar (12g)
1 tsp salt (5g)
3 tbsp vegetable oil (45ml)
1 cup cool unsalted butter, cut into pieces (does not have to be ice cold) (225g)
¼ cup cool water
2 tsp white vinegar or lemon juice (10ml)
Crumble topping
1 cup All-Purpose Flour (120g)
1/2 cup granulated sugar (100g)
1/4 tsp table salt
5 tbsp unsalted butter, melted (71g)
2 tsp vanilla extract
1/4 tsp almond extract, optional
1/4 cup finely mini diced ginger (46g)
1/4 cup walnuts, pecans, or almonds, chopped; optional (28g)
Peach filling
1 cup granulated sugar
1 cup water
1 tbsp lemon juice
¼ cup cornstarch
1 tsp pure vanilla extract
¼ tsp cinnamon
⅛ tsp nutmeg
4 ½ cups fresh peaches, peeled and sliced (788g)
½ cup rolled oats, optional
Egg Wash
1 egg
1 tbsp water
