Killer Cauliflower Pizza - Keto Diet Friendly

    Yield: 2-4 servings
    1 head cauliflower
    1 ea egg
    ½ cup mozzarella cheese
    ¼ cup parmesan cheese
    1 Tbls coconut flour
    1 Tbls Chef Brik’s “Black Garlic & Shallot” rub
    1 tsp salt
    ½ tsp cracked pepper
    Pizza Toppings - As needed
    tomato sauce
    pepperoni
    sliced cremini mushrooms
    mozzarella & fontina cheese blend 2:1
    fresh chopped oregano
    Method
    Preheat oven to 500⁰F
    Put ½ of the cauliflower florets into the food processor & pulse until it resembles rice. Transfer into a large bowl and place other ½ of florets into food processor to repeat the step above.
    Microwave pulsed cauliflower for 3-5 mins on high.
    Line a large baking sheet or pizza pan with parchment paper.
    Let cauliflower cool for 15 minutes. Once cool enough to handle, transfer cauliflower to a clean dish towel or cheesecloth & squeeze of excess moisture. Make sure to do this until virtually no water comes out & the cauliflower is dry.
    Transfer cauliflower pulp to a large bowl & add all ingredients, except the pizza toppings. Stir to combine & form a dough.
    Place dough in the middle of the prepared pan & push out with your hands to form a 9-10 inch circle, with about ¼ inch dough thickness.
    Bake for 15-20 minutes until crust is firm & slightly golden brown. Remove from oven & top with pizza toppings, or toppings of your choice.
    Bake for 8-10 more minutes until cheese is melted to desired consistency.
    Remove from oven and allow to cool for 3 mins before slicing portions.

    Made this tonight! This video Is the Best! Super easy to follow, not a bunch of dumb talking that just makes the video pointlessly long. Straight to the point step by step instructions. My hubby and I followed each step (only swapping out almond flour and adding our own seasoning) and it came out perfectly!!!

    I’ve made Cauliflower and broccoli crusts many times! You don’t need to cook it and mess with all that extra prep. I shred it, use it raw with no added flours . 2 cups shredded cauliflower or broccoli. 2 eggs , 2 cups mozzarella cheese . Bake at 400 for 15 min . Check out Dr. Bergs !

    i know that this is an old video but what I do like about it is that it is on POINT, you do not talk about any other weird crap like your day, life stuff and waste time like SOOOOO many other youtubers because they do it intentionally just so they can get watch time. You don't do that and I really like this a lot. I'm definitely going to give this recipe a try. Thank you.

    First time I’ve ever wanted to make a cauliflower crust pizza. I experiment lots with keto baking, etc. Have tried a few keto pizza ideas. Recently tried cauliflower crust from a pizza place and was surprised how good. So I’m definitely gonna try this. Congrats on a great video. I love the straight to the point info, as I’ve seen others comment as well. Like… REALLY LOVE THAT!

    You can shred it with a cheese shredder to no need for food processor if you dont have one but still want to make this

    Cauliflower, parmesan, egg, seasoning. Make dough more thin and it will dry out on its own and save that long process. Use organic tomato paste instead of sauce for less carbs and intense tomato flavor. Easier.

      Have been making cauliflower crust for years and you're totally wrong about it drying on its own.. Extracting the water is absolutely crucial to having a crisper more uniform crust. Skipping this step will leave you with pizza toppings on top of a disgusting pile of watery mush...and this is from experience...a couple of times at that

      That is what I do...just rice the cauliflower and then heat it over medium heat on the stove. Add Parmesan and egg and make a thin crust. Works every time.

    Thanks man real simple and clear cut, No BS straight to the point, I dont like a talk show reality show. Great well done hope you make some more, subbed. Mine came out fluffy bready , too much coconut flour, Plus I did not drain the califlower pulp. I personally like the taste of a floret, than what I made. I am going to try next time, no flour and more eggs, and squeeze the water out hard. i like a crisper crust.

    Instead of squeezing out the water, you can just pan fry the cauliflower rice on low heat until dry, not to brown but to dry the moisture out.

      It is probably healthier to cook in a frying pan over medium heat. It takes longer than 3 to 5 minutes in the microwave, and you have to stay on it to keep it from browning, but cooking the water out in a frying pan saves the time you would have spent squeezing the water out and nutrients are left in the cauliflower since you are only going to evaporate the water. It is definitely going to be a better option for anyone who has issues like arthritis or carpal tunnel that would keep them from being able to squeeze out the water.

    You never microwave it, you stick it in a frying pan on the stove to get all of the moisture out of it, constantly stirring to release the steam, and then you don't have to put it in a towel to squeeze the liquid out, go to chef Buck's channel, on cauliflower pizza crust, also you just graded with a grader, you don't turn it into a liquid in a food processor, and chef Buck is hilarious, I like his round cauliflower pizza crust video he's got a couple of them

    I like a chef boy RD pizza sauce because it has three cheeses in it and it’s the best tasting I don’t have to do anything to it I don’t like paste sauces
    And also add minced vegetarian Costco’s breakfast sausage, Olives, drained mushrooms and don’t forget lots of cheese on mine I can’t wait I’m having it the Fourth of July. My grandson likes pimentos in years so when he’s here I open the jar and put a few on there

    I made this crust for our pizza tonight, after cooking the crust for 20 mins it was still soft. I added the pizza toppings and cooked for a further 20 mins the taste was fine but the base was soggy! 😟

      I recommend using an almond flour recipe! Works great! Parchment paper is a must with these recipes.

    thank you for this recipie, i have looked for others and they explained well but, didnt explain how to incorperate everything well enough. While watching this i had an good thought remembering about some of those birds eye meals that have cauliflower in.... including their mash tatos they have thats real good... also can one just put the sauce and stuff ONTOP of the pizza instead of putting the crust in first ? specially if you dont want the pizza crust too brown?

      @@mishaunsahebi9442 Hello Mishaun --- not too heavy on the toppings. Both times needs to be cooled. When it is cooked the first time and then th second when you are putting on the sauce and the cheese.

      @@mishaunsahebi9442 Hello Mishaun --- if you are using 3 heads of Cauliflower you will need 3 eggs and 3 cups of Parmesan cheese. If you are you using 1 head of Cauliflower you will need 1 egg with 1 cup of Parmesan cheese.

      If you add the correct amount of cheese and cook it properly, you can actually pick it up. His looked right to me, like how I make it.

      @@ThePhilGrimm Yes. I noticed he left the pizza on the paper and placed it on the stand! I would have thought he would have removed if from the paper! You could use a little bit of olive oil to the paper to avoid sticking. (Or use a silicone mat?)

      Salt is not needed at all because all of the cheeses have enough -- unless you use a lot of salt! I left it out and the family member who salts everything without tasting didn't add any more than he usually does!

      you can use a saute pan to get the moisture out. You don't want to brown the cauliflower so I would set it on low.

      cook it in a pan, stirring regularly to remove the water--doesn't have to be at too high a temp. Medium would be fine, just stir regularly to ensure it's not sticking/ burning, etc.

      Place it in a large skillet and cook on the stovetop over medium heat to remove moisture. Stir frequently and don't let it brown. The water will evaporate and leave the nutrients and you don't have all that squeezing!

    Why are you squeezing ALL the moisture out. I leave 50% in and turns out perfectly. However I add a cup of almond flour.

      Can you pick up and eat it like real pizza? The nice thing about almond or flax meal is that the absorb moisture, but I wondered about how it might effect the texture. I don't htink he can pick it up either so..

    I saw a man get the moisture out by dry cooking it in a skillet. I can't imagine cooking it in a bunch of water to get the water out.

      You don't add any extra water to either method. I cook in a skillet over medium heat and stir frequently to remove the water and avoid browning.

      Parchement paper works best. Did he use wax? That's not intended for the oven..

    if you can make a pizza when you are on keto diet with replacing the dough with cauliflower does that mean we can replace any dough based dish like same lasigna and things

      You don't need cauli for lasagna. That's why god made eggplant. Slice it thin and dip in flax meal or coconut flour and layer it instead of the noodles. Boom.

    Eat the core raw as you're preparing the crust - it's tasty and good for you! And don't cook the florets - you lose nutrients and it's not necessary.
