It gives it a buttery umami taste. Restaurants that make this sauce all use butter, you can try using shortening as a substitute.
When you say soy sauce, did you mean salty soy sauce like the one the japanese uses, or the sweet one?

Why you use a salt? I think you already to use a 3 tbsp soy sauce
You may omit if you want it to be low sodium but the recipe is pretty on point
why use corn starch not flaur, the texture suitable for chinese style sauce b.peper but ingredient that using are wastern
U use dark soya sauce or light soya sauce

Its hard to find halal wortchester sauce. Any substitute for this?
I haven’t tried any substitutes for the worstershire sauce but maybe try using balsamic vinegar or apple cider vinegar

You can use vegetable broth, bone broth, beef broth.

You can certainly try! Ketchup has a sweeter taste so maybe if you use tomato sauce, add a tad of sugar.

I don't know which step went wrong, I kept cooking until it was very salty
You can opt to not add salt. It may be the chicken stock you used is high sodium.
Also at the end I made a mistake on the time, it should be cook on high heat for 10-15 seconds not minutes.
