I’m born and raised in Philadelphia and a self proclaimed cheesesteak connoisseur. Just wanted to give you props because that is one beautiful looking cheesesteak you whipped up.
This is the first time I ever heard a Philadelphian actually compliment someones cheesesteak. Philly people seem to love cheesesteaks yet simultaneously hate every steak because it doesnt compare to some mythical sandwich they ate 13 years ago from some back alley hole in the wall spot, and theyll fight you if say any other sandwich is better.

Anyone who tells you “there’s only one way to do a cheesesteak” isn’t from Philly. Everyone I know orders something different when we go to Dalessandro’s. The only thing I feel passionate about is chopping the meat up fine so it becomes one with the cheese, but hey some people like the ribbons 🤷🏻♂️
It's nice to actually hear someone say that lol. I hate food snobbery in general, but the arguments around the Philly cheesesteak always irk me, like what exactly makes this sandwich so sacred that it HAS to be done a certain way? And the irony of that is that it seems everyone from Philly already doesn't agree on what that "one way" is lmao. Some have certain ways of handling the meat, specific cheese or whiz, specific toppings, it's just weird. I very much believe that regardless of how anyone else makes something, if it's made the way the person eating it likes it, then it's done right.
For me the entire point of getting a cheesesteak instead of ground meat with cheese are those "ribbons". I don't necessarily want long strips of meat, but I want to see and feel that it isn't just burger meat. To each their own and at the end of the day we all agree that purists can go stuff themselves! 😁
Sure it’s cute, but those italian sub/grinder rolls are irreplaceable; dry and shaggy but not crusty outside, fluffy and light to absorb whatever on the inside
@@hellfish2309, but when good grinder/hoagie rolls aren’t available in bakeries where you live, you have to make your own, plowing through recipes to find just the right one. I’ve tried several because the “hoagie rolls” available to me are Pepperidge Farm. They’re hoagie roll shaped white bread that falls apart when ANY juices are in your sandwich.
As a dude from the UK who's only ever been the States once, and didn't go to Philly I've been craving a Philly cheese steak for weeks! Finally got round to making it tonight, and honestly didn't disappoint! Provolone is almost impossible to get here so I subbed it for cheddar, and it worked really well. Even being that close to Italy? I’m in the States, right smack dab in the middle of the border with Canada. Maybe because we have so many nationalities here, the cheese makers here do many different styles from many different cultures. We get just about every style of cheese imaginable right at the grocery store.

Joshie, wanna say that the format without tasting is working a little better - we always know what the outcome of tasting is gonna be, so skipping it while keeping the description of the flavours and textures is totally enoug. I like it, keep it!
Griddle for maximum surface and the cast iron to chop the meat. Doing to much steak in the cast iron would steam the meat and he might not like the idea of chopping in the plancha and messing it up
I made these for the first time the other day. In order to do it the 'official' way the first time, I picked up some boneless ribeye steaks. After the steak and other ingredients, and $60 poorer, I had enough filling for about 5 sandwiches. They were great, but definitely going to try some other cuts of meat next time.

Only if you have the ingredients and TIME on your hands. If not, that's over $20 to get the ingredients. Yes, you can make a bunch of them which may total out to $3 each but unless you're planning to give some away, it's most likely not very healthy for you. Also when you pay someone to make it, you're paying them for their time. It's also time that you are losing. Spending an hour to save yourself 4 bucks.. that's just not smart.

@@402SHO , right? Minnesota here and I love mine with peppers, onions and mushrooms. I don’t care what anyone else says. Only Hubby and I eat the mushrooms, so I cook them separately and add them to our sandwiches. Our young adult son just takes peppers and onions. It also stretches out the meat.
Josh I just made this and I'm in awe. So damn easy and tasty. I ended up buying hoagies from a bakery bc I'm lazy and everything else I had in the house. 10/10 recommend.
I use eye of round and fry it and onions in beef tallow to make it more flavorful, I also only hard sear half the beef so you get some medium well texture alongside the well done steak.

My ingredients are measured and I’m waiting for the butter to soften as I type this. I’ve tried several different recipes and I’m hoping this one nails it. I love making Philly-style cheesesteak sandwiches and I really appreciate Josh’s videos and recipes. We’ve really expanded our menus over the last couple of years trying things he’s demonstrated for us. So many east coasters here are full of themselves carrying on about how Josh’s bread isn’t good enough or right enough. Just stop! Fine, we get it. You have the best rolls available to you in your bakeries. Whoop-dee-do! A lot of us don’t live anywhere near Philadelphia or the east coast for that matter. The rolls you’re carrying on about just aren’t available to us. So we make do or make our own. Your bakeries don’t carry the regional baked goods we take for granted because we can get them anywhere where we live. You’re not special, you just live in a different place. Rant over.
Most of that is covering the R&D to make it taste sort of like meat. The cost should come down as those techniques become standard knowledge and practice

"Philly Cheesesteaks" are going for $16-$18 at some spots. But, they're not even making them correctly. They're complicating them. Put the bread on top of the meat, onions, and cheese on the grill for about a minute. Then, use your spatula to scoop everything up into the roll.

Plus he seems overly critical of fast food to the point where there's never a real comparison. Though all of this is just my opinion.

Bro, liking your version better is valid, but toaster strudel is puff pastry filled with jam topped with a simple icing. In no world does it taste bad. My dough is so much more sticky than yours. I added more flour as I worked it into the first big ball. It was still sticky after an hour but I'm in the 10 min little ball waiting period so we'll see how it turns out after I bake it! Thanks for the recipe!

That looks pretty dang good, and you weren't far off with the Philly accent. The American and provolone combo is the right move. Only comment is I would chop the beef a little more so you don't take a bite and have a bunch of strands fall out.
As a Philly native literally everything about this was right EXCEPT the meat. No actual philly cheesesteak place uses ACTUAL steak. It's that thin sliced pre frozen steak-em meat they use, so while this does look delicious it's NOT a Philly cheesesteak, it's more like a steak sandwich with the works.

I sous vide a chuck roast, brown it in a cast iron skillet, and slice it thin. Mix with sautéed onions and white cheddar, and put it on a hoagie roll... It's delicious and cheap and we have leftovers for days.

These videos are always hilarious to me. Sure, the cost of one of these for take out is $10-12, but the 'per serving' is the deceiving part. You actually have to spend much more for the bulk items/ingredients, to make 1 sandwich, which is obviously cheaper if you're making them for more than yourself or for guests. But by itself, for one person, is actually significantly more expensive.
honestly, every one of his "but cheaper" videos has this type of comment. And while I understand where you are coming from, how helpful is this thinking in the long run? It's about saving money over time, not for one meal (unless you are regularly hosting parties). most of this you can either freeze components for multiple meals or use other components to make different meals. you can freeze the meat you don't use, then thaw it when you need it. You can make the bread and freeze the loaves until you want to use them. Onions, mayo, cheeses, and seasonings can be used in multiple recipes. Omit stuff like sesame seeds if you don't find it necessary (though it has a lot of uses in other dishes). Plan your weekly meals to use similar perishable ingredients, and research on how to make them last longer. That's the whole point of the series. a one-time purchase of takeout is gonna be cheaper in the moment, but many purchases of the same takeout is gonna cost money over time. Even cheap instant ramen portions generally come in bulk; are we gonna say they are expensive because we have to buy more than one of them at a time?
It happens because Josh's pricing is pretty dishonest. First off, take out is more expensive not because of the cost of ingredients. It's more expensive because you are paying for labor, rent, and other operating costs. He's also using TX prices, which are often cheaper than nationwide. Making your own is cheaper, but if you figure in your labor and the cost of the equipment to cook, you get a more accurate cost.
@@Kingsley4851 The point I'm trying to make, is yes, PER SERVING, the cost of the meal is significantly cheaper than the single, one-time purchase. However, there are a large majority of single/busy people who do not have the luxury of preparing a meal like this every time they want to eat. If you buy bulk ingredients enough times, you'll just have a freeze/fridge full of ingredients and more money spent on food you'll likely never prepare. And your ramen argument is pretty sad. Instant ramen (in the US) is meant to be, and known to be cheap, and IS the meal. There are not other ingredients required to make it. You boil the noodles, add the powder into the water, and voila. Done. I can't believe you'd be so foolish to make that analogy when dealing with multiple different ingredients to make just this ONE meal.
I'm from Philly. Are we just going to ignore the fact that the biggest source of "savings" is the fact that your sandwich is about half the size of an actual Philly cheesesteak? And, that it has a lower meat to bread ratio, than most authentic Philly steaks? Hell, even your cited price, for buying a Philly cheesesteak is high. They typically run anywhere from 8-9 bucks apiece. Again, for TWO of what you presented. Both of which would be more filling, because there's more meat, therefore more protein. Combining those things, your actually cost comparison is about 7 bucks, and hours of waiting and cooking vs, at most, 9 bucks, to have someone else make it for you. It looks like a tasty sandwich, no doubt, but this isn't the price get that you're making it out to be.
When you are making a cheesesteak on a nice flat grill surface like that you gotta cook up your meat to the point where you are ready to form it up and put your cheese on it, then once you put the cheese on it you open your roll and lay it open-side down over the cheese and leave that cook for an additional minute or so.
Thanks for including a bit of a non stand mixer option. I always watch your Pizza Hut but better episode primarily cause it’s one of the few baking videos you have that doesn’t use a stand mixer. Appreciate the consideration for all your broke bois.
In the real world NONE of this is done for $3, anywhere ever. If you try to buy a cup of milk it will cost you $1.50 alone. The Yeast packets will cost you a buck. Flour will cost you $1.25 at dollar tree. sugar same. Like you're over $3 making bread before you've started. You're better of buying a store bought bread for $2 a loaf in the bakery.
One tip, if you want to be able to cut your steak into very thin slices, try putting it for 30 minutes in the freezer. It will firm up enough to be workable.
For the price, this looks gorgeous and, as always, this series provides a great road map to good taste without blowing the budget, but honestly, you could've made it even cheaper if you left out the got dang sesame seeds..... maybe the mayo too and gotta add your bun to the meat and flip it upside down. Makes your *B U N S* nice 'n warm.
So to make this and have the freshest bread you need roughly 2.5 hours from start to finish before you can eat. Or you can buy some bakery fresh bread and eat in an hour. You said yourself the results were about the same as the other cheese steak sandwich you had before. But I bet the bread wasn't fresh baked that day. Point being not having fresh baked bread isn't a deal breaker.
I gotta make this, although ill add some bell peppers to mine because thats what I like on my philly cheese steak. no way in hell am I baking bread though.
We make a similar sandwich in Turkey called tantuni from beef chuck and cut in a similar way, similar bread, it is very popular. No cheese but spices and onions, parsley, tomatoes and fresh lemon is squeezed on top. The trick to soften chuck is to boil it before, and then fry it in chili oil. If you do that you do not feel the fibers, it really feels like a more expensive cut. After frying, you dip the breads inner side to the chily beefy oil, add beef and the condiments, it is a messy sandwich, as it should be. You can boil the beef and keep in refrigirator for a few days, it is quick to prepare, since it is already cooked. It is a people's sandwich, originated from where cotton plantations exist with a lot of workers, traditionally frying is done in cotton oil, but do not worry about that. Man I think I will order one.
Couple things could be done to make this better, you want the onions to be completely soft and cooked all the way through, DO NOT add Mayo, its gonna ruin the taste of the PCS, instead take the onion and beef drippings and make a sauce out of that to add extra meaty flavor, if you mix the cheese into the steak you're gonna get better cheese incorporation into the whole sandwhich, and dont be afraid to add peppers and mushrooms, they act like the supporting characters in a movie...its not there to be a main flavor component, but to add a little extra to the overall experience

I don't think we should be putting mayo in a philly cheesesteak, but here we are. Sauteed onion, green pepper, and mushroom are allowed. As with most things, the quality of the ingredients is going to make or break the meal. Josh, of course, nails it.

I made these for the first time the other day. In order to do it the 'official' way the first time, I picked up some boneless ribeye steaks. After the steak and other ingredients, and $60 poorer, I had enough filling for about 5 sandwiches. They were great, but definitely going to try some other cuts of meat next time.
Ribeye is like one of the most expensive cuts out there. Look for blade steak super cheap.

Yes, you can make a bunch of them which may total out to $3 each but unless you're planning to give some away, it's most likely not very healthy for you. Also when you pay someone to make it, you're paying them for their time. It's also time that you are losing. Spending an hour to save yourself 4 bucks.. that's just not smart.

Josh I just made this and I'm in awe. So damn easy and tasty. I ended up buying hoagies from a bakery bc I'm lazy and everything else I had in the house. 10/10 recommend.
I use eye of round and fry it and onions in beef tallow to make it more flavorful, I also only hard sear half the beef so you get some medium well texture alongside the well done steak.

My ingredients are measured and I’m waiting for the butter to soften as I type this. I’ve tried several different recipes and I’m hoping this one nails it. I love making Philly-style cheesesteak sandwiches and I really appreciate Josh’s videos and recipes. We’ve really expanded our menus over the last couple of years trying things he’s demonstrated for us.
So many east coasters here are full of themselves carrying on about how Josh’s bread isn’t good enough or right enough. Just stop! Fine, we get it. You have the best rolls available to you in your bakeries. Whoop-dee-do! A lot of us don’t live anywhere near Philadelphia or the east coast for that matter. The rolls you’re carrying on about just aren’t available to us. So we make do or make our own. Your bakeries don’t carry the regional baked goods we take for granted because we can get them anywhere where we live. You’re not special, you just live in a different place. Rant over.

That looks pretty dang good, and you weren't far off with the Philly accent. The American and provolone combo is the right move. Only comment is I would chop the beef a little more so you don't take a bite and have a bunch of strands fall out.
As a Philly native literally everything about this was right EXCEPT the meat. No actual philly cheesesteak place uses ACTUAL steak. It's that thin sliced pre frozen steak-em meat they use, so while this does look delicious it's NOT a Philly cheesesteak, it's more like a steak sandwich with the works.

I sous vide a chuck roast, brown it in a cast iron skillet, and slice it thin. Mix with sautéed onions and white cheddar, and put it on a hoagie roll... It's delicious and cheap and we have leftovers for days.

These videos are always hilarious to me. Sure, the cost of one of these for take out is $10-12, but the 'per serving' is the deceiving part. You actually have to spend much more for the bulk items/ingredients, to make 1 sandwich, which is obviously cheaper if you're making them for more than yourself or for guests. But by itself, for one person, is actually significantly more expensive.
honestly, every one of his "but cheaper" videos has this type of comment. And while I understand where you are coming from, how helpful is this thinking in the long run? It's about saving money over time, not for one meal (unless you are regularly hosting parties). most of this you can either freeze components for multiple meals or use other components to make different meals. you can freeze the meat you don't use, then thaw it when you need it. You can make the bread and freeze the loaves until you want to use them. Onions, mayo, cheeses, and seasonings can be used in multiple recipes. Omit stuff like sesame seeds if you don't find it necessary (though it has a lot of uses in other dishes). Plan your weekly meals to use similar perishable ingredients, and research on how to make them last longer. That's the whole point of the series. a one-time purchase of takeout is gonna be cheaper in the moment, but many purchases of the same takeout is gonna cost money over time. Even cheap instant ramen portions generally come in bulk; are we gonna say they are expensive because we have to buy more than one of them at a time?
It happens because Josh's pricing is pretty dishonest. First off, take out is more expensive not because of the cost of ingredients. It's more expensive because you are paying for labor, rent, and other operating costs. He's also using TX prices, which are often cheaper than nationwide. Making your own is cheaper, but if you figure in your labor and the cost of the equipment to cook, you get a more accurate cost.
@@Kingsley4851 The point I'm trying to make, is yes, PER SERVING, the cost of the meal is significantly cheaper than the single, one-time purchase.
However, there are a large majority of single/busy people who do not have the luxury of preparing a meal like this every time they want to eat. If you buy bulk ingredients enough times, you'll just have a freeze/fridge full of ingredients and more money spent on food you'll likely never prepare.
And your ramen argument is pretty sad. Instant ramen (in the US) is meant to be, and known to be cheap, and IS the meal. There are not other ingredients required to make it. You boil the noodles, add the powder into the water, and voila. Done.
I can't believe you'd be so foolish to make that analogy when dealing with multiple different ingredients to make just this ONE meal.
I'm from Philly. Are we just going to ignore the fact that the biggest source of "savings" is the fact that your sandwich is about half the size of an actual Philly cheesesteak? And, that it has a lower meat to bread ratio, than most authentic Philly steaks?
Hell, even your cited price, for buying a Philly cheesesteak is high. They typically run anywhere from 8-9 bucks apiece. Again, for TWO of what you presented. Both of which would be more filling, because there's more meat, therefore more protein.
Combining those things, your actually cost comparison is about 7 bucks, and hours of waiting and cooking vs, at most, 9 bucks, to have someone else make it for you.
It looks like a tasty sandwich, no doubt, but this isn't the price get that you're making it out to be.

When you are making a cheesesteak on a nice flat grill surface like that you gotta cook up your meat to the point where you are ready to form it up and put your cheese on it, then once you put the cheese on it you open your roll and lay it open-side down over the cheese and leave that cook for an additional minute or so.

In the real world NONE of this is done for $3, anywhere ever. If you try to buy a cup of milk it will cost you $1.50 alone. The Yeast packets will cost you a buck. Flour will cost you $1.25 at dollar tree. sugar same. Like you're over $3 making bread before you've started. You're better of buying a store bought bread for $2 a loaf in the bakery.
But what you never considered is that the bread you are making, is not just resulting in ONE sandwich, but several. Now learn how to do division...

One tip, if you want to be able to cut your steak into very thin slices, try putting it for 30 minutes in the freezer. It will firm up enough to be workable.
For the price, this looks gorgeous and, as always, this series provides a great road map to good taste without blowing the budget, but honestly, you could've made it even cheaper if you left out the got dang sesame seeds..... maybe the mayo too and gotta add your bun to the meat and flip it upside down. Makes your *B U N S* nice 'n warm.
So to make this and have the freshest bread you need roughly 2.5 hours from start to finish before you can eat. Or you can buy some bakery fresh bread and eat in an hour. You said yourself the results were about the same as the other cheese steak sandwich you had before. But I bet the bread wasn't fresh baked that day. Point being not having fresh baked bread isn't a deal breaker.

We make a similar sandwich in Turkey called tantuni from beef chuck and cut in a similar way, similar bread, it is very popular. No cheese but spices and onions, parsley, tomatoes and fresh lemon is squeezed on top. The trick to soften chuck is to boil it before, and then fry it in chili oil. If you do that you do not feel the fibers, it really feels like a more expensive cut. After frying, you dip the breads inner side to the chily beefy oil, add beef and the condiments, it is a messy sandwich, as it should be. You can boil the beef and keep in refrigirator for a few days, it is quick to prepare, since it is already cooked. It is a people's sandwich, originated from where cotton plantations exist with a lot of workers, traditionally frying is done in cotton oil, but do not worry about that. Man I think I will order one.

Couple things could be done to make this better, you want the onions to be completely soft and cooked all the way through, DO NOT add Mayo, its gonna ruin the taste of the PCS, instead take the onion and beef drippings and make a sauce out of that to add extra meaty flavor, if you mix the cheese into the steak you're gonna get better cheese incorporation into the whole sandwhich, and dont be afraid to add peppers and mushrooms, they act like the supporting characters in a movie...its not there to be a main flavor component, but to add a little extra to the overall experience
