INGREDIENTS:
1 pound Fully Cooked Sausage (apple gouda used in this recipe)
7 ounces Lentil Rice
7 ounces Filtered Water
16 ounces Portobello Mushrooms
5-7 Garlic Cloves
2 Medium Zucchini
2-4 ounces grated Pecorino Romano Cheese (substitute Parmesan)
Handful Chopped Fresh Parsley
Salt & Pepper to taste
Drizzle of Avocado Oil
INSTRUCTIONS:
Quarter and slice zucchini. Slice and dice Portobello mushrooms. Mince garlic. Slice sausage. In a 10 in nonstick skillet add a drizzle of oil. Add mushrooms and cook for 3-5 minutes. Add sausage and sauté for 3-4 minutes. Add zucchini and sauté for 2 minutes. Add lentil rice and water, along with salt and pepper to taste. Bring to a boil, reduce heat and cover. Remove from heat and let sit for 10 minutes. Add grated cheese and fresh parsley. Enjoy!

I've just bought an Always Pan so have been looking for recipes and found yours. This sounds so delicious. I am vegetarian so would substitute with vegetarian sausages. When I next go shopping I will buy the ingredients though I have never seen lentil rice before. I am fed up buying ready meals which are expensive and there aren't many I can eat as they put sunflower oil and/or seeds in. I am life threateningly allergic to sunflower. So, in view of that I think my Always Pan will pay for itself in a few months.
