James, here's something you can do. It's called rucking! You start with 10% your body weight, then gradually increase it up to 20%. It does exactly what you need to hike distances with weight. I ruck 4 miles with around 13.5kg on my back (just water or sand bags) and I'm telling you, I have been able to walk loads in the mournes now! It's the best exercise if you can't get up to the mournes constantly. I ruck 3-4 times a week.

You could wild camp somewhere on the Mourne wall. I would recommend the Mourne Mountains book by knifes edge it has all the trail . I couldn't really recommend areas or route because that would depend on fitness.
