How do you know? A lot of Japanese, Korean, Thai or Vietnamese restaurants are owned and operated by recent immigrants Chinese. Over 90% of dirty restaurants featured in the show are Chinese restaurants and most likely the rest of 10% are probably operated by Chinese as well.
