Hi. What do you mean from hardening? Once the chocolate apples are dipped you need to let the the chocolate dry. During this process the chocolate will firm up, but not hard like regular candy apples. As far as the cleaning it's up to you. Some people at the beginning who have a hard time with this usually clean their apples like candy apples so the chocolate will stick to the apple. The chocolate will stick regardless cleaned in the lemon, water, baking soda, and salt solution or not. So it's not necessary, you can just rinsed them off if you'd like. Go take a look at my chocolate apples.

They should not get brown in the inside as long as you use lemon juice. I usually make all of my apples the day of the event.

After u melt the chocolate, you said you let it cool before dipping. So the chocolate doesnt start to harden sitting there?
