Jalapeño Gnocchi
(For the gnocchi)
-170g H2O
-85g butter
-155g flour
-3 eggs
-55g jalapeño
Cheese sauce
-8oz shred jack cheese
-2 cups milk
-pinch salt
-.2 oz sodium citrate
-.2 oz vinegar
Bread crumbs
-1/2 cup melted garlic butter

If you get rid of pasta, you lose spaghetti, ravioli, lasagna, mac and cheese and way more. Meanwhile the cheesesteak likers can't even agree on whether the official cheese is singles, whiz or provolone.

Hey Matt, here's a question. You put your hot pasta into the refrigerator. I thought you weren't ever supposed to put something hot in the refrigerator? I've always been told it messes with the refrigerator's cooling settings.

Hi Alaina. You usually don’t want to put a big pot of something hot in a standard fridge because the fans don’t circulate the cold air as fast as commercial fridges. With small flat amounts of a food like the gnocchi on a flat sheet is usually fine to put into a home fridge. The big concern is bringing the overall temperature of the fridge down and allowing everything else to spoil. But long story short small amounts on a flat tray are usually fine in a home fridge.

if you put hot pasta in the fridge it’s gonna slowly cool down. That’s why you use a ice bath to instantly cool it so it stops cooking completely

Yeah it would force your chiller compressor to work overtime to cool down the chiller. Commercial chillers can do this better.

It's parisian gnocchi, which uses the pate a choux base he made.
You can also make ricotta gnocchi as well! Definitely don't have to include potatoes.
