Hand pumps are still really common in the UK. You'd struggle to find a pub that didn't have a few hand pumps.

Now you've got a beer engine try a cask conditioned Golden best bitter as drunk by many in Northern England. The key is some torrified wheat to give some body and the West Yorkshire ale yeast which attenuates quite high to give a bittersweet rich taste. When pouring put the sparkler on the pourer and put that to the bottom of the glass.

My friend owns a pub here in the UK and throws so much cask ale away because it’s only really good for ~5 days due to oxidation. Beautiful beers but require a lot of ‘looking after’

Time in the keg will clear it out. I made an Irish Red last month and it took 10 days in the cold to round out and clear up fully. I used Wyeast Irish Ale. Mine isn't as dark - too light even. I pitched a 2 liter starter cuz I didn't want to decant. May have diluted it. Also only used 5 oz of roasted barley and c120. Also used Golden Promise. It's tasting really good. Less caramel than Smithwicks but VERY similar. Has a nice snappy and mild taste.

Nice one guys, did the handpull come with a sparkler? to screw on the nozzle? try that, screw it on tight then back it off half a turn, put the nozzle as far down in the glass as possible and leave it there throughout the pour. About 5psi on the keg to assist and it'll look like a nitro pour with the tight bubbles in the head. As to whether keg nitro was inspired by beer engines, absolutely no idea... all I know is British keg bitters were utter shite... thankfully, craft breweries have proved that beer served by this method can be decent.
