Here in China I can't get plaice, but I often cook something similar with other fish. Ever come across black garlic? It would go a treat with your dish.

mmmm, the plaice ought to be a whiter colour and the skin covering should come off easily. I usually do the lemon butter sauce at the same time as the fish in another smaller pan. That way the sauce is ready to pour just as the fish are plated. BTW, I have recently been using rice bran oil. I find it great for cooking fish.

My favourite fish.
i do this with lemon sole which we catch on the boat,i always use sunflower oil as it seems a lot lighter than olive oil
had a read of other responders some wouldn't know a beautiful dish I cooked shark and its was the best .

Screw that, all you need is plain flour, salt n pepper, brown the butter nice n hot drop fish in 2 mins each side.
