Hi Gloria. You could just completely leave the hash browns out. And if you wanted to add grated cheese and/or cooked bacon crumbles or sausage that would up the protein content.
I think i will make a batch for my kid to take for work i will need to go a little spicer for her lol
Yummy. You could add some spicey salsa, or chopped jalapenos.

I bought the pan from a restaurant supply store in Florida. You might find them on Amazon.
