      +Hei Yiu Cheng You can but it won't give the correct constancy. Cake flour has a different protein content which gives a fluffy texture, scones aren't meant to be fluffy like a cake

    My old neighbour told me to always put the scones close together on the tray so they rise higher...never forgotten...works every time 😀

    FOR EVERYONE IN AMERICA, HERE ARE THE INGREDIENTS :
    2 cups + 1 tbsp flour
    3 tbsp caster (or granulated) sugar
    2 tsp baking powder
    1 tsp lemon zest
    1 1/4 cup cold whole milk
    about 2/3 cup fresh raspberries
    1 egg beaten
    what recipe should i convert next?

      How does it taste like? I have never try to eat or make scones before. I dont know what to expect of the taste. Does it go hard if left out long at room temperature?
      I want to try it using cranberries. Can also right?

    man, i love your videos! I've noticed that you put a decent amount of butter in almost every recipe. Is it just your thing, or a tradition of British cuisine?:)
    Btw, a week ago i've made a Victoria Sponge on my B-day, according to your recipe! The amount of butter really scared me, but as a result everyone were SCREAMING MAD of how delicious it smelled! So that was worth it i guess:)

    I had a few bakeoff episodes pop up, then a Paul Hollywood Scones video... Watched that one and have used it as my base - where it largely conforms to yours (the national ideal of sorts).
    Have made 3 batches (normal flour), then whole wheat, then whole wheat with FAKE Currants (Corinth Currants/Zante Grapes - I hate them give me things that won't kill my dog's kidneys).
    The first batch came out lovely - the egg top was so flavourful & it had a well balanced flavour.
    The second was alright, but very bland... I used a bit of leftover milk in the egg-wash and also applied it to the bottoms to get the dusting out.
    The very last one worked well in 1.5 senses I guess, they're alright with a bit of easy sweetness. But where that sweetness shines was actually using these as buns for meat. It's like your cranberries for a bit of sweetness with meat, but already done & no messes. I don't like condiments pretty much at all, I like dry foods... so a fairly dry scone/bun that absorbs from the meat - yet already has a bit of sweetness too, then firm yet light as a bun is fantastic. I think when using them in this manner I'll just put the terms together with a hyphen Scone-Bun!

    egg free - could you brush the tops with milk instead? that's what I use for normal scones. would that work for these?

    If only you'd made this sooner! Last scone video you said to fold them into the mixture before baking but they turned the mixture into a sticky ball of goo, even with extra flour...
    Oh and I visited Crumbs and Doilies in Soho for the dirt time on Tuesday! I had a mint chocolate cupcake :)
    Sadly no sign of a certain Miss. Wilson... :(
