It's much easier (and economical) to feed you starter 1x a week and store it in the fridge! I take it our every Saturday, let it warm up a bit, discard & feed and then let it rest for a few hours in a warm spot to "eat". Then back to the fridge it goes. I take it out the night before I want to bake and feed it (no discard this time), and then leave it on the counter overnight. The next morning I typically give it a second feeding. After it's nice & bubbly and doing it's thing, I'm then ready to start the baking process.
Once your starter is ready to bake with, you don't need to feed it every day! Keep it in your fridge and only take it out/feed it when you want to bake with it. You shouldn't have to discard at all once your starter is established, because you'll be reducing the volume after every feed by using the starter in your bread--if you want to take out extra discard once in a while so you can bake something else with it, you can, but so many people feed their starter every day and it's pointless and wastes a ton of flour! Especially since you're using the more expensive bread flour, don't bother.
Actually this might be clearer with exact amounts as an example--I use 250 grams of active starter every time I bake sourdough. I keep 125 g of starter in the fridge all the time, and on the days I bake I take it out first thing in the morning and feed it with 125 g of filtered water and 125 g of flour, so also a 1-1-1 ratio like you're using. After that doubles and is super active, that gives me 375 g total of active starter, so I can take out the 250 g to bake with and the leftover 125 g goes back in the fridge until next time. That way I always have the same amount of starter and don't have to deal with finding ways to use up discard. To create a back-up to my starter, I did this same process but instead of baking with the 250 g of active starter, I spread it out on parchment paper and let it dry until it crumbled into little chips, so I have those stored in a jar and can just rehydrate them if my starter every goes moldy, gets dropped on the floor, or something else goes wrong.
