Rumi's "beloved" is Allah or God. He was an Islamic scholar and theologaun and a Sufi poet. In the West he's been somewhat 'whitewashed' to the extent that most traves of Islam have been removed from his works to make him more palatable to western sensibilities. This song is also a sufi song, and ultimately addressed to the divine.

It takes some time to form and some time to disappear. In essence he is saying to his Guru that you made me forget god. These metaphors have many layers of meaning and they are just exquisite.
