    Gaz I have been watching you since the beginning and have all your cookbooks. And have always thought you were were on the cutting edge of vegan food and teaching is not only about our food, but how to turn anything Vegan and importantly that it can be amazing, delicious and gourmet.
    But I have to say, you're moving to the country and seeing you connect with the natural world has moved you to a whole other level in my book. I am a true Vegan through and through and have always been aware of the natural world and it's benefits.
    And I am so thankful to see you bringing the natural world more authentically to your recipes and videos.
    I think this is the only real way we can truly appreciate our veganism and our connection to the earth and the plants.
    Your new approach is going to help a lot of people who would have no access to know about these natural resources.
    And inspire them to seek them out.
    I for one applaud you for your effort to connect us to the earth in a more holistic way through our food. Thank you so much for your gift that you so freely continue share with us. We love you!!!

    I used to have very bad bronchitis. I once had pneumonia and it left scar tissue in my air passages. Whenever I got a simple cold after that, it would turn into bronchitis that would last for long, hard weeks. I was told by a member of the Black Hebrew community to make tea from stinging nettle and drink it three times a day with a bit of sweetener. She told me not to drink it later than early evening because it is a very powerful expectorant.
    In three days the bronchitis was gone - and never returned.

      Oregano oil is good for this too, it's so potent just having a sniff clears the airways 😂 Although I prefer to ingest it via a veggie capsule as it tastes gross!

      @@gazoakleychef Yeah, that was every bit of 30 years ago. Haven't had a bronchitis attack since drinking the nettle tea 3 times a day for 3 days. I did get colds or flu after that, but it never progressed to bronchitis. Not once.
      Since being Vegan (7 years) I get almost no upper-respiratory illnesses. My Husband (87) and I (63), both Vegan, got Corona. We got over it ourselves at home in three weeks. No lasting effects except some reduction in my ability to taste some foods sometimes.

    Stinging Nettle is a staple on Eastern European cuisine...I can remember all my childhood hunting it with my grandmas. we make everything from tea to delicious nettle paste-stew. yum

    When I grew up my dad made us nettle soup or cooked nettles like it was spinach or put it in puree! He also used to make pancakes with dandelion in it - this was an old recipe passed on in our family for generations

    Really enjoyed this vid! The sandwich looked phenomenal! Made me miss the times I could eat gluten. Also nettle tea surprisingly has antihistamine effect, which is great to ease pollen allergies.

    We used it all the time in Spring back in Romania when we were children. My grandma used to make a nettle “risotto” and also a nettle soup/cream and used to eat it with horseradish. It was delish and naturally vegan as well 🤤🤤

    Last year during the lockdown in Summer I collected so much dried nettle seeds. They have so much protein like hemp seed. A nice nutty flavour and I like to sprinkle them over my porridge. So good!

    the countryside is doing you guys good, everybody is so happy. I can feel Gaz 100% with his excitement about the nettles, when i went to the country and found out I can make the BEST applepie of my life WITH GREEN TOMATOES I was sold!! _everybody_ NEEDED to try the pie and then I told it like the biggest secret of the world ... "guess what THERE IS NO APPLE IN THIS APPLEPIE, BUT GREEN TOMATOES WOAHOO CABOOM CABOOM*" *fireworks. yeah. the countryside is awesome. it opens your mind for a whole different kind of ( and more pacient way of) cooking. so much more joy when you use your own veggies. season by season. Immediately people shut down from listening and everyone becomes defensive. Lead with confidence, patience and compassion. That is someone worth listening to.

    This is not the weirdest thing you will ever cook on your channel. It is just the beginning! It looks very tasty. I love nettles. One of the many things to forage. Mushrooms, ramps, fruit berries, etc. you have so much to look forward too. I eat and use nettles to help control my allergies. They really help!

    The great poet-Saint as he is called, Milarepa, subsisted for a long time on nettles, while he was living in Himalayan caves. National “Be Nice to Nettles week” in the UK happens during my birthday week! or used to...I still want to grow a lot of them, and make nettle cloth, etc. Nettles also make vegetable rennet!!

    Growing up in Albania my grandma used to make Pispili which looks like a pie. It has a cornflour layer and for the filling she uses a LOT of nettles, spinach and green onions. Ohhh I miss it so much! Thank you for your wonderful videos! ♥️

    Southeastern Europe has been eating nettles for centuries. I grew up eating my grandma’s nettles soup with rice and going nettles picking in the woods in the springtime is still one of my fondest childhood memories.

    I absolutly agree nettle is a underrated superfood.
    It‘s so beneficial with people, like me, suffering from iron deficiency, and they are also good for the blood and our urinary tract.
    Nettle is amazing in many ways
    also that sandwich looks absolutely amazing! 🤤

      and I am also not claiming that only nettle helped with my iron deficiency and anemia, there are many factors, but nettle is great at keeping it sustained in a good way

    I hope it's not the weirdest thing you will ever cook on your channel.I would love to see more vids & recipes of herbs & edible "weeds".& Foraged foods even mushrooms..etc ...I drink nettle tea..Ive eaten them only a couple of times steamed like spinach . delicious..full of iron...they grow where there is a lot of nitrogen in the soil.. especially where chickens have pooped.the sandwich looks delicious,I will definitely try this .thank you .💗🙏💗

    Nettles are an abundant gift here in the PNW. I like them in smoothies and also soup; think spinach soup. I have made nettle pesto and nettle tea, but never nettle tempura; I have to try it. Nettles are best in the spring before they form seeds.Native Americans make baskets and cordage with the stalks. They are an amazing plant! Beautiful video!

    Nettles remind you of seafood because their mineral content is so high! They smell and taste of seaweed which are similar. It's a good foraging tip, too, if you can smell them nearby they're ready to be harvested.

    Mayor flashback moment: My mom used to make nettle tea every summer when I was little. It’s really refreshing when served cold. Really don’t know why we stopped making it…

    Water can dissolve more gas when it's cold, so if your soda water is cold then it will have more CO2 in it that will all suddenly get ejected when it heats up and aerate the batter. If it's warm then a lot of that gas will already have dissipated before you fry it.

    Been following this channel for a few years, its taught me so much about cooking, and it keeps adapting and evolving into something more interesting :-) A hungarian friend taught me how to eat nettles as a kid, and I used to eat the tops to impress friends (tough gal), these recipes seem really fun to try out. Love this new angle, gaz, more in harmony with nature and with a sustainability focus. Keep creating banging recipes that we can feed to meat-eating family and friends to tempt them to move towards a more plant based way of life

    Some of us in russia still using it in our spring-summer meals. This year I actually cooked so called green borshch with nettle for the first time. Wander why I didn't use it earlier. Need to pick and freeze some for winter season.

    Yes, nettle is one of the best foods that we can eat and there is so much of it. Many wild plants are so much more nutritious than the cultivated stuff we grow nowadays.

    Hi Gaz, Natural Healer here...I love a vegetable sandwich and pesto is one of my favorite spreads seconded to hummus. Healing the body and enjoying the taste is a twofer. I am not a gardening person but seeing you work your garden and surrounding area, into meals, is inspiring.

    Actually, they can be handled w/o gloves After Sitting on the side for atleast 10 mins after being harvested;) (They loose their itchiness)
