    Your eggplant parm looks absolutely delicious! In North American, corn flakes do have gluten unless you buy those specifically labelled as gluten free. For coatings, I also use gluten free panko crumbs or sometimes brown rice flour (but rice flour isn't a big crunchy coating like corn flakes or panko). Also a good substitute for flour in the quasi-cheese nutritional yeast sauce would be potato starch.

    For your cheese sauce, rice flour and gluten-free flour blends work very well for creating a roux. I regularly use these flours for thickening purposes with no discernable difference from wheat flour.

    This was splendid, I absolutely loved the esthetic of the eggplant parmigiana and I can tell that it would taste amazing. This was a beautiful recipe and the only thing I would add would be a pasta to go with the extra sauces. 😊

    Gaz, you probably already up know this: garbanzo bean flour is a good substitute for dusting/coating with wheat flour. And, sauces can be thickened with cornstarch slurry. Those of us with gluten sensitivity have to be so careful that I rarely eat in restaurants because of the sauces. All that being said, I love your recipe and look forward to buying your book! All of your gardening and cooking endeavors mirror respect and love. ¡Salud!

    Be careful with corn flakes for someone with gluten sensitivity... in the US Corn Flakes aren't gluten free (they have malt in them). Hopefully it's different in Wales!

    Absolutely gorgeous eggplant. It's fascinating how similar eggplant recipes are around the world. Sticking in garlic in slits and putting the whole thing on fire is a classic! I I am a plant-based pediatrician and I can't believe how incredibly flexible, healthy and delicious-looking your recipes are. I love would to recreate this dish for my children on our channel.     I don't eat gluten or suger or dairy for my skin and I've learned that some cornflakes have gluten in them which is sad but I just make my own gluten-free Muslim it's super tasty and notritious and I eat it with fruit so not suger needed

    Eggplant/aubergine is one of my favorite vegetables to grow. It does really well in my zone (zone 6). Asian eggplant is perfect for stir fry.

    Cornflakes gives it a southern twist. Here in the states I buy gluten free panko. I love your excitement over harvesting. Congrats on the first. This looks really good.

    Do a video about your garden fails. That would be awesome. I have veg back garden myself (a little one) and every year I experienced a fail. This year for example was fennel. Failing in gardening is normal. It would be good if u show some to encourage people this is normal because from my personal experience most people opt out from gardening as they think they success every time. Something to consider.

      My fail last year was Broccoli. I didn't cover them properly and the caterpillars ate them and the smaller bugs were in them so badly I couldn't clean it properly to eat. Wish me better luck this season!

    Great video but what type of flour was used in the cheese sauce and to coat the eggplant? Traditional flours are not gluten free

    Excellent video as always bro🙌🏾have you every thought about doing a set up at the Good Food Show at the NEC, i was there yesterday and there was not many plant base stuff there. If you did a show in the Big Kitchen it would be epic.
    You could even doing cooking demo classes, set up a store sell Merc the list is endless.
    There were no stalls selling hot Vegan food🙈🙈

    That's a cool recipe, but I wonder what flour was used there. Because the idea of using flour in a roux and batter for the aubergine but avoiding breadcrumbs sounded a bit weird unless it's one of the gluten-free flours.
