as a former chef, this is such a joy to watch. the way he does his prep is just so optimal and basic, and reminds me of how i was trained to do prep. that is, how to do prep alone, regardless of the amount of prep that there was. no movement is wasted, he isn't running anywhere, every action is optimised. truly beautiful.

This man is amazing! He preps and cooks all by himself. He is quick and well organized. I'm Japanese and I'd love to eat his curry udon and tamago toji tempra don.
As a cook of 14 years, this guy is amazing. He’s not only single-handedly doing the prep, but he is doing much more. He is simultaneously prepping for service and producing for the next couple days. His shrimp tempura looked amazing. His tonkatsu prep looked totally awesome. He started and finished a full shoyu stock while making another batch of curry sauce. As a Japanese American, these foods are part of my history and watching this owner/operator completely doing the work was magical.
It's the same guy in the beginning is same one cooking in the end? I thought it was 2 different guys. Prep chef & owner/chef. The one in white shirt seems more robust & his hands look totally different I thought.
Much respect to this guy, he does all the preparations, cooking and opening himself for 17 yrs, now that's dedication and skills, everything looks yummy and fresh. All those heavy lifting for his age is a bit worrying though.

She worked a 12 hr day and died in her sleep. The doctor had given her 3 months to live and she died a few days over what was said .. she always said they can take my license but not my drive ...if u stop me from working just bury me now ... my children's generation don't wanna do anything but be on the phone or computer hardly ever outside...God bless our older generation of all nationalities!

He's 87 (doesn't look a day over 70), and he's *always* busy. He mows our land plots with an old-school scythe whenever the grass grows too tall in our absence. He tends to several orchards in addition to his own. He forages in the forest. He works the land. He also has a few chickens and a pair of goats, I think. He insists that he has to keep busy, or else he'll just burn from the inside. He just isn't at ease when he's idle for too long. God be my witness, I am a citybirb and I hope to be like half as spry as he is now when I'm 70. I mean, I love running, swimming and such, but there just is this integrity to the man that I lack in comparison. Integrity and dignity. I'm sure you know what I mean.

Yeah agreed. Look at him do that with patience. But I think he's used to it already. So nothing is difficult for him right here. When you do same thing thousand time, you won't consider it as difficult anymore. It's like a muscle memory thing.

I love watching food videos. The video graphics and sound are amazing. This gentleman is truly inspiring and so precious. His food preparation is done so carefully and methodically. It's like watching a symphony of sound, flavor, and love. May this gentleman continue to be blessed🌹
OMG... he's doing it all by himself.. i have such a huge respect for him. Very hardworking man. I will try to visit him on my next travel to Japan ... wishing him a healthy life.
