It was not difficult if you can buy kombu, anchovies and bonito. And sake is easily replaced with dry white wine. So now you can combine the ingredients at home)
As a Euro-Asian-American (Indo in America) I just LOVE these videos because my late Mom used to make this from scratch after seeing it somewhere in Indonesia when she was a kid. Her main hobby was cooking.
It is absolutely amazing how these guys make and cook pasta. Craftsmanship with the highest precision. May they all long live to continue making such delicacies.

Making rice balls with Something... Making sushi with sobu noodles (seasoned with what?)... I would've loved the comment; what is other interesting stuff on sushi? I've been watching a few Japanese cooking/restaurants videos in the last few days... The ones that are really interesting are those that give at least SOME comments re ingredients and steps..... The only fascinating part is him making the sobu noodles completely by hand!
