    Thanks for the video! I took note of several variations of dishes for cooking at home. I learned how to do Dashi and kayoshi with udon as in Marukame. It was not difficult if you can buy kombu, anchovies and bonito. And sake is easily replaced with dry white wine. So now you can combine the ingredients at home)

    A whole hour of showing the cooks putting something into something, adding more of something... Making some liquid stuffs, then combining them with more un-named stuff.... Making rice balls with Something...
    Making sushi with sobu noodles (seasoned with what?)... I would've loved the comment; what is other interesting stuff on sushi?
    I've been watching a few Japanese cooking/restaurants videos in the last few days... The ones that are really interesting are those that give at least SOME comments re ingredients and steps.....
    The only fascinating part is him making the sobu noodles completely by hand!

      Typically the Japanese culture has a much higher standard for cleanliness. If someone was to get sick from the food, it would be shameful to the restaurant and chefs

    A partir de 22:24, desculpa, mas a clara do ovo está crua. A meu entender, a clara sempre tem de estar cozida (a gema crua é cremosa e boa, mas a clara não)
