How to FREEZE ZUCCHINI and SQUASH | NO Blanching | 2020

  • Here is an easy quick way to freeze your zucchini and squash....No blanching required. Just have clean, raw zucchini or squash and cut up or shredded. Then place desired amount in freezer bags.

    Thank you for the information! I use the large zukes for mini pizzas "bites".
    Like bagel bites only better.
    Cut zucchini sideways for the "pie crust" circles. Cut at least an inch wide.
    Pizza sauce, turkey sausage, mini turkey pepperoni, mushrooms, motz cheese. Bake at 350 for 10-15 minutes.
    Cool and enjoy! Big hit with kids and healthier than pizza. Plus are small enough that you can use a whole big zucchini on one cookie sheet🥰

      @@ASimpleLifewithChrisTara yes I found that recipe on UA-cam tube. It's a slim brunette guy but I don't remember the "channel" he said they are like pizza bagel bites in his video. They came out fantastic so I'm making more this weekend and they last a few days in the frig too in lil containers. But they don't last that long cuz we eat them😂

    Great video! I freeze mine for the winter too. I also will shred up cucumber if I can’t use it all up and use it like zuchinni in zuchinni bread. Works great!

    I'm so glad I found your video. I'm hoping this will be the year I need it.
    BTW my mom had a knife set like the knife you're using. I found some a guy was selling new at... Hah! I cant remember where I was. It was like a little home show. Anyway, I was so excited to find them. I bought a few for my mom, to replace the ones she had forever, and some for myself. They're like little razors. They need to be sharpened often but they slice so well. Cheers!

    You can also bread the squash, flash freeze n pack. Does great. I can zucchini shreds for dishes, soups, etc

    I like to make squash or zucchini fritters when they get too large in the garden. Grate zucchini and onion, add cornmeal, egg and spices and make pancake size fritters.

    Hi I’m wanting to do this… once defrosted are they soggy or fresh? I’m only wanting to do this for stir fry’s and soups.

      Hi Kelly....they do not stay firm like fresh. Think of how they are when you buy them frozen and unthaw them. We use ours in soup etc. Hope this helps a little. Thanks for watching.

    I’m first time growing zucchini and am amazed at how super fast it grows. I have some that are really big and want to shred and freeze for making zucchini bread. How did you do the shredded zucchini? Do you have to squeeze any liquid out before freezing them, or just shred them and put in freezer bags and freeze. Also, how long will they last frozen? Thanks bunches!

      Congrats on your first time growing zucchini.....that is awesome!! They grow overnight it seems lol.
      Wash and cut off ends of zucchini.
      Using either a box grater or food processor grate zucchini.
      Place shredded zucchini on top of cheesecloth and squeeze out as much water was you possibly can.
      Place zucchini shreds in a mason jar (pack it pretty tight) or a freezer-safe bag.
      Should keep 3- 4 months but I think longer.

    Are mushy when you use them later? I blanched some before and they weren’t good.

      We use them in soups or stir fry. I mean they will be soft and not firm like straight out of the garden. But this is a great way to keep them and not have them wasted.

    I’m wondering if the zucchini freezes into one big lump. I’ve been freezing on a cookie sheet and then transferring to a bag.

      Yes, they are frozen together somewhat...but we just kind of bang on the counter and it breaks it up. We use our chunks for soups and stir-fry etc.

      If they are wet when you put them in the bag the water will freeze causing that big lump. It helps a lot to dry them with paper towel before putting in bag.

      We have always used our frozen squash or zucchini for like stir-fry, soups and bread. Sooo I have not tried frying our frozen only our fresh. We need to try it that way. Let me know if you do as well.

      The best way that I have found to have fried squash in the winter, is to fry and season just the way that you would if you were going to eat it. Then put it in freezer bags. When I’m ready for some, I put it in my cast iron fry pan and put it in the oven on 350 and bake. You can also heat it in the microwave. My husband likes this way. I like to crunch it up in the oven. 😊❤️🙏❤️🙏❤️🙏❤️🙏❤️🙏❤️🙏❤️🙏 P. S. I thaw it before putting it in the oven. 😁

    Just found your video! I am wondering why you don’t blanch the zucchini first? Trying to figure out the best way to freeze my zucchini so we can eat all year long.

      Tell you the truth...I have never blanched first. We chop ours up first then just freeze. We freeze ours for like soups and stir fry. We also shred for zucchini bread. I know blanching is to keep it from turning color and becoming mush. But I think ours turns out just fine when using for soups etc. Maybe try some one way and some another to see which you like. I always liked saving me any steps I can lol.

    Does shredded zucchini last very long frozen with it being so liquidy or do you drain it first? I would love to freeze them this year for zucchini bread throughout the winter.

      I don't drain mine for zucchini bread which I think helps with it being Moist. I personally do not drain while freezing it either. Usually keeps good for like 8 maybe 10 months. Hope this helps.

      I shredded and froze a bazillion zucchini last year. I drained it prior to freezing and then needed to drain it after it thawed and before I used it. I use mine for pizza crust using eggs, mozzarella cheese and three tablespoons of almond flour and spices. As much as I love zucchini bread, we’re trying to stay as close to keto as possible so I haven’t been making the bread for a number of years.

    you don't need to use freezer bags.. any quality zip lock bag will work in the freezer and are usually less expensive

    Is your squash mushy after it’s frozen? I just froze a few yesterday and tried some today. It’s mushy. Is that normal?

      Not as firm as fresh....but I just use mine for like soups etc. Fresh is best to eat without being cooked. Hope you a great day and thanks for watching.

      I found some on Amazon. I got mine at Goodwill I think it was. I am going to send a link...let me know if it doesn't work.
      I just cook with them as if it was a frozen bag of veggies. But I also have let them thaw just a bit.

    Another channel on freezing zukes said you must boil them for 3 min. Is that necessary to kill germs?

      Not needed. Just wash them with water and if you want to add a splash of Dr Bronners soap.....then rinse. It is great to wash produce with.

      They say 4-6 months. You can always check...will not be "bad" just might be a little freezer burnt if kept longer. Double bag would be best as well.

      Well, they say 3 - 4 months, but if you double bag it, I think it would last longer.

    I thought you have to blanch the chunks but can just freeze the ahredded

      They might stay firmer if you blanch first, but I always just use them in soups and stews, etc. So I don't blanched them.

    Can't you just freeze the whole zucchini in a zip lock bag, then thaw and cut right before use?

      I have not tried it that way. We freeze ours before so when we get them out of freezer they are ready for whatever recipe we are using them for. Plus, I dont know how they would slice once frozen. If you give it a try let us know how it works out. Thank you for watching.

      I just done further research and read that freezing whole raw zucchinis whole doesn't work and when you use afterwards the zucchinni becomes mush. The same with sweet potato.
      So far the only vegetable that could be frozen raw whole is potatoes. From my research.

      @@ASimpleLifewithChrisTara I dry mine too. If it's wet it all freezes together. When it goes in the bag dry it comes out dry and not stuck together (ice).

      They say it can cause discoloration which can make your veggies soggy?? But we use them in soups and stews etc so we have no problem. Hope that helps.

      To kill the enzymes. They can keep doing their thing even in freezing temps. Thats why she says hers come out mushy.

      Well, it is thought to help keep vegetable firm. We use ours in soups and stir frys...so works well for us.

    Zucchini is a squash so please use the words correctly... Zucchini squash and yellow squash or which ever squash you are using... all are a squash!!!... Education!!
